I did the exact same thing. I bought 2 bushels of farm stand tomatoes and canned them. Now my own tomatoes are slowly coming in and I am washing and freezing them as they do so that I can have full batches to can when they are all done.

I canned everything I could get my hands on in 1978. Lol I moved in 1983 & still had many jars of food leftover. Thank God there were no cameras in my kitchen. I admire you , Kaye, for your flexibility & transparency in your kitchen. (citric acid) Your final product will be delicious this winter when you make chili & spaghetti sauce. BRAVO! 👏👏

Kaye, I am a former Home Ec teacher who loves to can. If you are canning DIFFERENT SIZE JARS, you time by the largest jar size. Therefore, your quarts and 1 1/2 pints should process 40 minutes. You tomatoes looked beautiful! Katy May Ps. Explore steam canners-uses much less water.

Kaye, The only new item you will need is the steam canner. Mine is a Fruit Saver Steam Canner but there are several brands, stovetop or electric. They are easy to research.

I canned first time this year.Made some salsa and pickles,LOL,it is a very rewarding feeling seeing those jars all sealed and displayed:-) I read where if you put a little vinegar in the canner water,it keeps the jars and lids from clouding up.I did not do that,but will next time to see if it works. It's been such a long time since I participated in making tomato canning with my Mom. Nothing like it. Maybe it was because we were a family of 8 kids but my Mom salvaged the juice from the cutting board to add to her homemade soup and that too was delicious. Thank you for sharing another great video.

When I canned back in the 90s I just used a stock pot with a dish towel in the bottom to waterbath can my tomatoes cause that’s what I had and it worked just fine. Last year When I decided to can again I bought a canner from The Goods Store online that does waterbath or steam. I haven’t tried it out yet cause I’ve been using the All American pressure canner I got on Craigslist for a great price. I plan to try steam canning on my own tomatoes when I get enough for a batch.

Ah the trials of canning!! That happens to all of us at one time or another but you're a good sport and laugh at yourself. The trials of Kaye!! Lol. Love seeing you canning. Keep up the good work!! I have never used citric acid or lemon juice in my tomatoes. I just put a tip of salt in each jar!! Never lost a jar!! Take care!!❤ I think we all get that film when we can. Doesn't hurt anything.

I have never noticed that leaving the peels and seeds makes it bitter or taste bad I always just leave them. The pint and a half is my favorite jar. I do my potatoes in them and it is perfect for my husband and me. You process the pint and half as a quart

Well it’s interesting because you get all the chaos all the jars on the rack by the time you load them up you know and the water is simmering but it takes a while to come up to a boil so I believe you start the timing when it gets to a boil so this could be quite a few minutes in there while it’s getting there so I’m confused about that part

@@Latebloomershow I always have the water pre-boiling over..... rather than under. I find it easier to take out than to add water as it slows down the being all ready to go part having to add water. Yep, yep the hot pack water bath method is all the things prepped and ready to go so that it is a go from the putting of the jars in. Otherwise, it seems to take forever. As you get back into it you will be fine Kaye!!! One of my favorite pastimes... even though I consider myself an advanced canner is to watch canning videos. I learn something new every time!!! Also, I never go from memory, I always look it up in a ball canning book.

I like to just add some jars of tomato paste to my sauce so I don’t have to cook it long. That keeps more nutrition in the food and much less cooking time, win/win. The emersion blender is an awesome invention. I love mine. I have one for cooking and one for making soap. I always run mine too long so hopefully I don’t wear them out early.

Anytime I can I let the product sit overnight then wash my jars with soapy water before storing....sometime the jars will have a film where the jars syphon just a bit in processing

Quarts and later the pint and halfs. The half gallon comes to the top of the pot so I would not be able to cover it in water

Corer or not device, you're doing great, Kaye. Mary's Nest is a wonderful canning source because she uses safe methods of preserving food. Yep, it's a good idea to have the Ball book. Yes, watching different canning videos to give you the confidence to do it yourself. Buy both, citric and lemon juice. Maybe a pint is a good size for you. Always make sure your content (sauce) is the same temperature as the water bath. Good job, Kaye, you're canning. Look at your ferments, nice.

I had few tomatoes out of the eleven original seedlings I transplanted in my container gardens last March. I have seven living tomato plants and a few fruits on the vines but the plants are again struggling with our 100+ degree heat. Hope to do better next season. I am a beginner here in the upper desert. Very hot early in May so that hurt.

Add a tablespoon of white vinegar to the water in the pot when you process the jars and the hard water won't stain the lids.

To take up space in the pot if you don't have enough jars fill a jar/jars with water and put lid on and can with your other jars,

did they tell you what variety they are?,,My system is very different ,I offered a canning workshop last year but got no response ,I have canned every year for 40 years .I even have a colindars i bought in NM before I met kc .I use no electic devices and use over 20 heirloom variities of tomatoes that I save the seed from as well.

What I’ve found is great craftsmanship and deep discounts/sales after you buy your first product. I know it’s pricey compared to cookware from China.
