Its not just water, its a bit of ice so that the pizza gets cooked normally everywhere except for the center where it gets cooked but remains moist and then make the Cacio-Cavallo/Parmigiano melt on the center after mizing so ehat you gets is a pizza with a cheese sauce on top that stucj to the daugh and cooked with the daugh making it so that its not just dough eith a cheese sauce on top that eill slide off. Mind you, its not my favourite type of of pizza whatsoever even tho I live here in italy, but theres thought behind it, eveb tho the ultimate goal was using the fame if Cacio e Pepe (wich is a type of pasta) to sell pizza

I never heard of using ice for that. I only know that you mix hot water with the cheese to turn the cheese into a sauce and you do that prior to baking, so the cheese sauce is already on the dough when it goes into the oven.

The pizza was only bad because you did it wrong. It's a common mistake so it's not your fault, but Water Pizza requires Ice XIV, not Ice I. The orthorhombic crystalline topology of Ice XIV leaves the pizza with a light and springy texture that you miss out on when you try to use hexagonal crystalline ice.

Next time try the real cacio e pepe. You basically have to grate a lot of cheese (the best is pecorino) on a pan, then let it melt using the boiling water of your pasta, just a few big spoons in order to make it creamy. Then you coock the pasta and mix it with the cheese sause. Finally you put a lot of black pepper on top, some also put it directly in the sauce
