Stefano Callegari closes the circle of Roman pasta on pizza with his famous Cacio e Pepe. After his triple calzone filled with Carbonara, Gricia and Amatriciana, Callegari shows another original creation: with the same dough and thanks to the use of ice during the baking process, the Roman pizza maker, believe it or not, has managed to recreate a Cacio e Pepe on top of a pizza.
