An amazing hike through the Kotor Fortress to the San Giovanni castle, not easy as you guys had to climb 1350 steps to reach there. Wow, a spectacularly beautiful view up there. It looks like a mini Great Wall of China. Awesome review of your first traditional Montenegrin food. Those squids stuffed with shrimps looked yummy indeed. Aha..l'm like that cat, would not eat that black risotto...🤓🤓🤓 I will always make sure to remove that sac of black ink from the squids before l cook them....must be very careful when removing the sac. Yeah when cleaning squid, I always remove the beak, the quill and the ink sac. Even if you accidentally burst the sac, the ink is easy to rinse off. Maybe that's how they extracted the ink.. the sac is always inside the squid.

Wow the Montenegro delicasies 👏🏻look super delicious , you could get the ink sac inside the body of a squid , Malaysian has a dish using squid ink but not advisable to use the ink too much on your cooking because you might get a stomach ache. I would say, actually Squid Ink Dishes very popular in Indonesia and some in Malaysian (state of Kelantan/Terengganu if im not mistake which called Singgang Sotong) When i was travelling in Indonesia, the restaurant they also do served squid ink with the rice. At first i cannot eat and feel disgusting and weird (Sorry 😂) but who knows now is my favourite dishes. I cook by myself 😋 That was so yummy! Everyone must try. Btw, thumbs up to Ivana & Steeve! I just looked on Shopee for squid ink.. holy moly, you can buy jars of it! Not cheap, 90 grams for RM55. There is also squid ink sphagetti - also expensive, 500 grams for RM15 (normal sphagetti is about RM4). Not everything that comes up is edible, though.. there is squid ink hair dye. Ivana didn't have to worry about her lips.. it was mainly the teeth.. 😂

That's most likely cuttlefish ink in the clip. It's traditional Dalmatinian food and we do not buy ink, we just put fresh cuttlefish ink glands in the sauce and it colours the entire dish.

When you open up the squid there is like a black vein that holds up ink. You cut it out and take the ink. You dont need to keep them captive and scare them all the time to make ink : )

In Johor 🇲🇾, it is dish called Sotong Masak Hitam (Black Stirred Squid), which is squid been stir-fried with squid ink. It is delicious eat with hot white rice.

Guys, squid ink is Italian specialty, nothing Montenegrin about it. You seem not to know that Kotor was a Venetian city for a LONG time. It only became part of Montenegro/Serbia/Yugoslavia in 1918. Old town Kotor architecture is entirely Venetian. You will see the same architecture in coastal Croatia which was ruled by Venice for over 600 years. Along the coast there is Italian influence in the cuisine.

Yes, all the dishes looked Italian enough, including the use of the squid ink. Stuffed squid (calamari ripieni) is quite Italian, being popular in Italy's south (Sicily, Calabria, Apulia). I've heard even Pope Francis likes to prepare stuffed squid - stuffed with the chopped tentacles, breadcrumbs and parsley.

@@gerardfernon3339 I agree. Kotor is not the cultural center of Montenegro. More of Montenegrin real estate that was managed and crafted by Venice, than they bounced, but their legacy is still there. It is probably the most beautiful place in Montenegro.

Though Austria lost Venice itself some decades later, they held on to Kotor and the other places along the Adriatic coast until World War 1. I'm guessing the name of the restaurant with the squid ink risotto, Cesarica (empress in Serbo-Croatian?), might well be a reference to the Austrian empress, who would have been empress of the good folk of Kotor as well.
