Hi folks I'm new to your channel from the UK..... Its heart warming you have your girl's in the kitchen with you learning the life skills for their little families in the future.... Here in the UK we don't pressure or water can Bath. I would love too learn I have started a working garden 3 years ago and so much goes to waste. I bulk prep meals pies cakes ect but canning might be my next thing after watching you folks thank you for the inspiration...... I will keep you posted. Need to research ty

Great job. You must feel so good about all that you've accomplished. One thing I love about sauce is the chance to use up all the veggies that may be close to going bad or adding in hidden nutrients. Lol. I hide all the veggies under the tomatoes while it's cooking. Smells amazing!!

I found about 3 years ago. That if I just put my tomatoes in my nesco roaster and cook them down. Then I let it cool some. Then I put them in my vitamix. It grinds up the seeds and skins where you don't even see or taste them. That is how I have been making my tomato sauces like ketchup, spaghetti sauces etc. So much less hassle. I've been a canner for 44 years so far. And this makes it so much easier. Also 2 years ago I bought an electric water bath canner. Wow! What a game changer. Love it. Can just set it up by my sink and no more lugging water to my stove. Or the worse thing was lugging that big kettle water bath canner full of water from my stove to my sink. To dump it. It has a spigot on the side that just drains the water after you are done down into the sink. Thought it was a stupid thing till I bought one. It's brilliant! And as I have gotten into my 60's. This makes it so much easier. Had fun canning and drying etc. Though this August every bit counts challenge. Got alot put away so far. Will be busy for quite a while yet as I still have alot left to do. Was fun watching everyone and what they were putting away. Gave me alot of ideas. Thanks everyone! 😊

What a great tip! A nesco roasted has been on my wishlist for a while, hopefully I can get one by next canning season! I had no idea there was such a thing as an electric waterbath canner. I will absolutely have to look that up! It would make some things way easier!

@@FromtheRootsUp got my roaster for Christmas 20 some years ago! Love it when I'm canning. Easy to make broths, sauces etc. Without having to baby sit it. And the electric water bath canner I bought from Amazon. As nobody local had them stocked yet at that time I discovered them. I first saw one at our county fair 3 years ago in the canning section of the fair. The price has risen since I got mine. Like everything going up.

A dear friend from my church gave me a food grinder called a squeeze. I just cut the tops off, cut them in half and grind them through the machine. It removes the skins and seeds. All you have left is the sauce. It is one of my fav tools now. I dehydrated the peels and seeds and powdered them and I use it as a thickener like tomato paste. It works great.

Hi, I put my tomatoes in my food processor after I core them and then after they pulverized I put them thru a strainer and discard the seeds and skin that is left. I then put this tomato juice in one of my crockpots and add a half cup of sugar and two tablespoons of salt, which when this cooks down to my desired consistency it has the taste we prefer. Then after it cools I put it in freezer containers, two cups per container and freeze them. I don’t have the space for keeping jars so I freeze.

If you dehydrate/freeze dry your tomato skins, then powder them, you can turn that powder into tomato paste; the skins contain pectin. Also, coring the tomatoes *before* you blanch them makes them much easier to peel (and core!)

When I did peel my tomatoes, I cut an x in the end, and they peeled really easy. Now when I peel them, I dry the skins and powder them to add as a thickener, much like adding tomato paste.

@@herhomeandharvest yes, it turns out nice, so long as you don't do what I did the first time, and forget about them... However, within the next couple years, I think a freeze drier will be in the plans.

I've slipped the skins off as you are doing with dipping in boiling water then icd water. I've cut tomatoes in half and broiled them for 30 seconds and the skins come off. I have so many tomatoes this year... I just put them in baggies and they are in the fridge until I can stand working with tomatoes again. I need to figure out which way works best for me.

Fantastic effort . Good job on your every bit counts challenge. I have a query though. Doesnt spagetti sauce without meat need pressure canning? Seeing it has peppers and onion etc in it. The USDA book says pressure canning. Page 3-13 , 3-14

Thanks for watching! The ball book of canning says adding the lemon juice to each jar raises the acidity enough to make it safe for water bath. If you left out the lemon juice though you would need to pressure can it.

If you roast the tomatoes and let them cool with plastic wrap over them, the tomatoes will peel themselves. You can also roast everything together. It will eliminate 80% of the water in the fruits and Veg. It will cut your summer time by almost 4 hours.

I put all my tomatoes in the freezer in ziplock bags. Then when I’m ready to process them, I put them in my big sink and running it full of hot water the skins slide right off.

Please remove the rings from your jars, they will create false seals and can cause your food to spoil and in turn make your family sick. ❤
