Dum is a type of preparation. That kind of preparation can be in any cuisine - mostly it is Lucknow or Hyderabad. In this preparation the top is covered with dough sometimes on the edges of the lid or the whole top opening like in this video. Basically the food is steamed and the dough acts as a seal. Further, Mutton is expensive but the interesting thing is if you order boneless or with bone that affects the amount of meat. Cause generally they weigh the mutton and then put it in the preparation. In case of boneless you might get chunks of meat but then those dishes are marginally priced higher.

Mutton is 3 times costlier as compared to the chicken and this is the reason, you have small quantity of mutton in mutton biryani as compared to chicken biryani... There are few other places famous for their Biryani.. like Hyderabad, Lucknow, Moradabad and calcutta has their own different version of Biryani

@@Shortleft_TravelsNo, he meant guavas just before when they turn yellow or fully ripe. Guavas in the initial stages have a slightly darker shade of green i.e. when they are raw and not fully developed but as they mature they turn lighter green. If you eat at this stage, it's got that crunch, and it's not as sweet as the fully ripe ones. That's when you eat them with salt, chili powder. Fully ripe ones are mushy and soft as you rightly pointed out.

People will be selling corn during season by roasting it on charcoal fire and than when it's done taking a piece of lemon 🍋 and dipping it in mixture of salt n chilly powder and rubbing it on roasted corn... It's very common during rainy season... Google how bhutta Or makka ( corn) is eaten in Maharashtra

Good question. In a biriyani the rice with its taste & fragrance is key. The mutton or chicken is the supplement. Too much of meat will upset that balance in a biriyani. Cost is a factor yes, but above is the predominant reason. P. S. - some people order separate dishes of mutton or chicken in gravy for their meat craving while enjoying a biriyani!

Quantity of Mutton in Mutton Biryani is less because Mutton is very expensive in India. It also depends on where you eat Mutton Dishes and it's price. Mutton is costly . Yes. But more rice is generally used to trap all the flavour of different spices. Chicken can hold the flavour more than mutton when cooked with rice.

One biryani is ordered mostly for 1 person. So quanity of meat pieces served in it are enough for one person. Of shared between 2-4 people then it wont be sufficient
