By popular demand we've now started carrying pecan brittle! I would say it's definitely a new favorite of mine, it has a nice buttery flavor to it, and I'm sure you'll love it too!

For anyone wandering what their brittle tastes like I can tell you that it's probably some of the best peanut brittle I've ever had. Most brittle that I buy in stores tastes very processed and overly sweet. This has just the right amount of sweetness, but you can still taste the nuts that were used. Also the texture is to die for. Crunchy and light. I've yet to try the Pecan but I'm very interested.

I'm just a home cook and armature maker. I watch to learn. That said, I make a mean pecan brittle, if I say so myself. My secret is to toast the nuts in the oven and keep them warm while the brittle comes to temp. That way they nuts stay crisp and it doesn't cool candy when added. Thanks for the awesome videos! I keep them on while I make Christmas candy. :)

Yours looks terrific. Have made pecan and almond brittle for Christmas for the last 20 years. You've found the right track for the pecans -- I put raw pecans in at the end and then bring the candy back up to temp. I treat raw almonds just like raw peanuts and put them in at 270. I have to put them in plastic bags in the Christmas tins because it will get sticky from the water out of the other candy that was cooked to a lower temperature.

Many years ago, i would make candy and truffles as gifts. For my friend who was sensitive to tree nuts, I used to make sunflower/pumpkin seed brittle for Christmas. Only small time, just for friends but my allergic friend liked being included. Wow, I haven't thought of Candy as gifts for years!

Coconut oil has a 2yr shelf life. Nuts stay fresher longer in cold storage. Some ppl keep them in the freezer
