We've been consistently told that Carcar has the best lechon in Cebu. So how great can it be when the whole island of Cebu is well-known for their lechon?

Another special thing about Carcar lechon is that its skin stays crispy even after 8 hours from purchase. We tried that many times during our occasional weekend trip to the south of Cebu. We bought the lechon at around 11AM for lunch and its skin stayed crispy at 6PM during our dinner.

It doesn't matter which lechon vendor you pick from this array of lechon stalls, you'll certainly get the same sumptuous lechon because Carcar people seem to have used the same ingredients and same preparation method that make their lechon more special and uniquely more succulent than anywhere else except Talisay lechon which is quite good as well. Talisay City, the border city to the south of Cebu City has also been famous for its lechon along with Carcar. Their epic rivalry in 'roasting Cebu's best lechon' have started since time immemorial.

Atsara is pickled medium-ripe papaya and it is usually eaten after eating lechon to get rid of the fatty or oily aftertaste. Atsara is also eaten after consuming barbecued meat or fish as it has anti-carcinogenic properties.

Cebuanos only use simple dipping sauce for their grilled, roasted and fried meat and fish. And that is a concoction of soy sauce and vinegar (usually coconut vinegar) spiced with hot chili peppers and lime.
