CEBU, PHILIPPINES - Hope you’re having a great day! Today we’re in Cebu, Philippines and going with Carlo and some friends to eat at a legendary goat restaurant where they specialize in goat heads. Then after that we’re going to try a few local Cebu street food snacks.
Thank you very much to my friend Carlo from ‪@KalamiCebu‬ always great to hang out, and be sure to follow him for fantastic food recommendations in Cebu, Philippines.
Cyria’s Kandingan (goo.gl/maps/3S...) - On the outskirts of Cebu is Cyria’s Kandingan, a very popular restaurant that serves all things goat. Along with the kaldereta, which is one of their signature goat stews, the most prized dish they serve are stewed goat heads - and they only serve 80 per day. Everyone I saw orders a mix of dishes, but doesn’t miss the goat head - and they sell out fast!
After the amazing goat meal, we continued on this Filipino street food tour with pancakes that are made just outside of a school. The pancakes are served hot and fresh with a little peanut butter on the inside.
Finally to complete this food tour we stopped at the market to try bibingka, a Filipino rice cake cooked in a wood oven.
It was another fantastic day of Filipino food in Cebu!

Kudos to the guy selling the pancakes still manage to put on a hairnet, and to the lady selling the bibingka spending more than 10 hrs. Talk about pure dedication to their work. Very Hardworking and Hygienic people.

Everyone has different cultures and are used to eating different foods but the way Mark shares is very respectable and explains things very well and clearly for those of us who wouldn’t normally eat things like goat 🐐 head or meat. I give Mark mad respect for what he does. He not only honors the customs of the country he’s in but everyone who watches him too. Thank you so very much Mark. Safe travels. Carlos didn’t seem like he liked the eye as much as Mark. He faked it really well though.

ok. i dont comment on YT vids....but...i actually got the mark wiens ghost pepper from amazon. the amount that he put on his salad at the beginning of the vid is totally insanely hot. i can barely take 2 small shakes (and i like hot stuff) on my food. Mark is no doubt the top pepper eater i have ever ever ever seen.

I believe this is your 4th video doing your Philippine food series in Cebu. As a Local here in Cebu, watching you eating the foods here like the Tungol, Ginabot, Bakasi, Goat Head and the Infamous Cebu Lechon does not make me jealous. As a Huge Fan of yours Mark, what I really envy about are the local people here in Cebu (Cebuanos) that has the privilege to see you in person. I hope I could bumped to you personally in the future. Try aji dulce, trinidad perfume, Tobago and Grenada seasoning, frontera, habanada, and for the very spicy fatalii and apocalypse scorpion. If you can grow them, you'll enjoy the fruity flavors.

If only Carlo (Kalami Cebu) know that Carcar City is also famous for its goat dish, he could have taken Mark there to try Carcar's own kaldereta. Carcar is not only famous for its succulent lechon but also famous for many other food items like the kalderetang kanding (goat stew in tomato sauce).

I'm from Quezon City now in USA my dad makes kilawin and kaldereta we buy whole roasted goat but I've never seen a head stew. I've tried the lechon panga one time and it's very good! I'd like to visit Cebu someday. Mark inspires me travel when I saw the Italy, I went to Italy and New Orleans.

kinilaw is the local philippine ceviche made from seafood or anything that can be eaten raw.. kilawin is a ceviche-type preparation of meats like pork or goat.. since they can't be eaten raw, the meat is boiled first.. the water is discarded and the meat is then prepared kinilaw style with vinegar, aromatics and seasonings.. you should also try pork face kilawin with the snout and ears.. delicious..

The only thing coconut in the bibingka is the livening agent which is the Tuba(fermented coconut sap) but the city made version have baking soda as livening agent, but yes thats cebuano kind of bibingka so it has coconut milk. In some areas rice is soaked in water overnigt before being ground to consistency to make the batter.

Oat meal, Goat meal. That's good sir that you appreciate eating all the parts. Kalderetang kanding is one of my favorite childhood dishes, loving eating it as a toddler probably. When you got the jackfruit dish I was almost going to say that you are now more Filipino than me. That's really impossible but what I mean is that it is so good to see you loving the Philippines through enjoying the food, meeting the people by sharing your food.
