It has been a long time since I have shared a vlog. Since my last vlog, we have purchased an RV van and have been enjoying the van life part-time. On this trip, we are headed to Lake Morena, which is in the San Diego area.
At first, I was not excited about this location because it was dry, and this was before I saw the beautiful lake. The area was dry until we got caught in a pretty wild storm. We had a good time riding bikes and eating bomb vegan food. I even provide a few tips on dumping your RVs.

Smoked Paprika Pink Oyster Mushroom Flatbread
I hope the summer never ends, even though it is a beast cooking in this heat.

Ingredients for Smoked Paprika Pink Oyster Mushroom:
1 batch of Pink Oyster Mushrooms
1 - 2 Tbsp grapeseed oil
1 Tbsp smoked paprika
1/2 tsp cumin
1/4 cup red onions, chopped
salt & pepper to taste
Ingredients for Flatbread:
2 & 1/2 cups flour
1 cup of warm water
2 tsp instant yeast
1 Tbsp Italian Herb Seasoning
Toppings:
vegan pesto
vegan feta
chopped red bell peppers
red bell pepper sauce
sofrito Italian seasoning
Step 1. Pull apart mushrooms and place them in a cast iron pan. Use a pan or press for cooking the water out of the mushrooms. Once water is removed, chop mushrooms into smaller pieces. Place the mushrooms back into the cast iron pan. Add grapeseed oil, smoked paprika, cumin, red onions, salt & pepper, and cook until the edges are crispy.
Step 2. In a bowl, mix flour, Italian seasoning, and instant yeast. Add warm water and combine well. Create a ball with the dough. Cover and place to the side for 1 hour.
Step 3. Create your flatbreads by cutting and shaping the dough. Add oil to pie iron or pan (if baking at home). Cook until golden on both sides.
Step 4. Build your flatbread with pesto, mushrooms, red bell pepper, feta, sofrito seasoning, and red bell pepper sauce.
Avocado Jalapeño Sauce with Black Beans & Rice
I shared a video about 9 months ago making black beans and rice. So many people requested what sauce I used, so I decided to share it and post it in the comments below. I can eat beans and rice daily with this bomb sauce. Enjoy and leave me a comment if you enjoy it.
Avacado Jalapeno Sauce Ingredients
1 handful of cilantro with the bottom stem cut
1/4 cup chopped red onions
1 avocado
1 Tbsp minced garlic
3 Chopped and seeds removed jalapeño
1/2 cup Vegan mayo
1 tsp Salt
1/2 tsp Pepper
Other ingredients.
Seasoned Black Beans
Vegan Feta
Crispy Onions
Chimichurri Sauce
Brown Rice
Step 1. Prepare/Chop onions, jalapeños, and avocado.
Step 2. Mix all ingredients and blend until smooth.
Step 3. Enjoy!
