As an Indonesian, I can understand Steven and Brittney's reactions to the oil splashing when they fry the chicken and how they couldn't breathe and cough when your mother cooks sambal in the house. Seeing other people struggle makes me laugh since that is what I used to struggle with every time I returned home.

@@dapukisgoingon Yup, where I'm from we call them the "clean" kitchen (the indoor one) and the "dirty" kitchen (the outdoor one). The dirty kitchen is the one you use when you are cooking proper meals. Especially in large quantities for the entire family. The clean kitchen is mostly used to prepare drink like coffee or tea for guests, and maybe to plate up some snacks as well. This only applies to larger houses though, that actually have the space for both kitchens.

I just realized Indonesian fried chicken is very similar to Nigerian fried chicken. Nigerians also parboil the chicken with a sort of spice blend before frying, and there's no batter or coating.

Hi Steven.. I am your fan since the "Worth It" days and it is so great that finally you cook some Indonesian food. As an Indonesian and a chef for more than a decade I have some tips to par boiled the chicken Indonesian way. First, the yellow paste should be sauteed first until the paste produce a nice smell and turn golden brown. It is necessary to remove the bitterness and strong tangy flavour of tumeric. Then you pour the water and turn the stove low heat and then put the chicken while the water still cool. If you put the chicken on the boiling or hot water, the chicken meat will be tough and dry. Keep the low heat and stiring it periodically until it is really reduced or almost empty. It takes 3 - 4 hours to cook usually but you will left with spices rich tasty Indonesian style chicken. The Indonesian yellow paste usually contain of crush garlic, shallot, galangal, ginger, tumeric, lemon grass, lime leaf. Good luck! 😁

My grandma owns a fried chicken restaurant here in indo and I've seen the restaurant crew made the chicken so many times and you guys nailed it ❤️ but honestly it could be yellower, you need to submerge the chicken when you're boiling it to make it yellower, and you also can add coconut milk to make it mellower if you don't like tumeric that much. Other than that you did great 👍

It’s in every Asian culture to eat the cartilage. I’m Chinese and my husbands Cambodian, we both grew up eating the chicken cartilage. Chinese restaurant sells them pan fried. Japanese sells them yakitori. And Korean sells them fried. Literally they are on the menu. Love this episode. Niki is beautiful.

This might be my favorite episode so far! As an Indonesian I'm glad to see Indonesian food in one of my favorite youtube show. And you guys nailed it! It might look simple, but if you pair it with sambal & fresh lalaban (cucumber & lettuce), it will elevate the flavor even more. I can’t say I prefer one over the other, but I am worried that Steven might still be reeling from the first episode with Ronny. His confidence in his cooking seems to have taken a real hit and while I like watching him interact with other cooks, it seems like he’s trying to step back and just be in the advisor role instead of cooking.

The thing with Indonesian dish is... It's not really established yet internationally. We have such a rich collection of food and culture and it's kinda sad that the one that truly made it are just Indomie at the moment. Hope Dishes like Soto, Nasi/Mie Goreng, Rendang, Pepes, Bakso, Cilok, Cireng, Mendoan, Tempe, Satay, Martabak, and all the other good stuff can make it just like our pride and joy NIKI!!!!!

Extra tip: boiling the chicken (along with the spices) in coconut water instead of regular water will elevate the flavor on a whole new level. Also, don't be afraid of overcooked it. Our mothers at home usually boil the chicken down for at least half an hour before frying it to golden brown and crispy. For the rest of the chicken, you can store it alongside with the now thicken marinate in closed food containers and put them in the fridge for later frying. In freezer it can store for a month or two (make sure to really freeze it). But, usually the marinated chicken will never go to the fridge because the family with eat them all within 3 days because it's that good. 😅 I remember my mom used to make this prepared marinated chicken whenever she'd go out of the town for a few days. We only need to fry the chicken for quick meal and serve it with warm rice and sweet soy sauce sambal. Yum! Thank you for granting Niki's request!! ✨

we have a fast food restaurant called richeese factory here in ID (rip off name, I know) and they basically sell fried chicken with white rice and the chicken is dipped with super spicy. and then, you get to eat it with plenty of cheap cheese sauce (hence, the name richeese). there you go.

The coughing when frying sambal hits too close to home. It's me everyday when the uncle from fried rice vendor next door is cooking. The smoke can brings tears 😂 And when they fried the chicken after ungkep? So relatable, my mom often hits me because I cower whenever I fry the chicken. It explodes oof Also cartilage?? Oh yes bestest part 😋

omg i've heard of niki and know of her music but seeing her still so down to earth and chill and connected to her roots is really refreshing and so sweet. i'll definitely be checking out more of her music now.
