It's sad that sophie is missing out on every meat we have here, I know she is vegetarian but please NEXT TIME ask to the place if they have either "nopales", "champiñones", "lentejas", "flor de calabaza", "tacos de flor de jamaica", "huitlacoche"....so she can have that filling instead of meat, we are very good at making these things for people who don't eat meat also you can ask for Chorizo de Soya which is common aswell.... If she eats cheese, then ask for an Queso Panela asado or any melted cheese, queso fresco aswell is very mexican and good in every state they make it different, and plese always ask for cebollas asadas, guacamole or pico de gallo, add sour cream and salsas, radish, pineapple, cucumber... and with all that you have a whole world of mealtless options to combine everything you order. I feel she is not using all the things we have to offer for vegetarians

Mexican food is my favorite. Oaxaca and Cotija cheese are my faves. All looked delicious! My absolute favorite thing in summer is Mexican Street Corn. Gonna get the ingredients to make some at home. I usually have to buy a huge bag of cotija cheese lol bc my local Mexican Store only sells it in a big bag..the local store doesn't have it, but surprisingly has 3 diff types of Mexican Crema (sour cream) which is wayyyy better than regular sour cream..I love Guacamole too Sophie!!

The roasted onions taste sweet because roasting the onions caramelizes the sugars present in the onion hence the slight sweetness. I have never seen them cooked directly in the fire, around here we wrap em in foil paper and roast them in the coals.
