i would love to see how a fancy banquet gets handled! or one of those really exclusive posh places without prices on the menu lol. but honestly anything will be interesting - it could be a food truck or a michelin starred restaurant (or a bakery/tea shop!) and i will still watch

I love this vid! Not many people understand the stress of working in a restaurant kitchen. The long hours, no days off, and constant stressful environment, lets respect those who dedicate their life working in hospitality

Okay this is humbling and awe inspiring. What a fabulous story. I love the boss running that pass 1000/10 so clean so professional. The three in the kitchen re-heating or second step assembling WOW OMFG these guys are good!!! This is obviously such a respectful team who truly cares about the food they are surviving. 1000/10 again wow wow wow so well done on everyone’s part. Fantastic!!!!

I absolutely loved this video! I hope this video gets the respect it so much deserves! I have done this job for the better part of my life, after having kids (just before Covid) changed jobs. But life at the pass still gets me, it was always a trill to get the evening rolling! Much love!

Almost every restaurant has "unsustainable" working conditions. Working in a kitchen is probably one of the most stressful jobs on the planet. There's rarely any time to rest for a minute.

It's not personal. Expo always is in control and proactive in their communication and the cooks are reactive and basically trust her calls.

I worked in a restaurant for 10 years, 6 years as a Lead/server and 4 years as a manager. The only thing I miss is the food, that's it haha

This reminds me of how I managed to cook for 6 people in my apartment with about 30x30cm of counter space left to prep everything, except on top worldclass restaurant level. Absolutely amazing!

The lady on Expo would drive me absolutely insane. "2 puff, cucumber, egg, 2 crudo, 2 chickens" What??? 2 puff, 1 cucumber, 1 egg, 2 crudo, 2 chickens! The massive pauses are what causes confusion! The looks on the chefs' faces and the overall lack of enthusiasm tell me all I need to know.

Her mentioning induction vs gas reminded me how stressful it was for my dad when he was a cook. The heat must be suffocating. More restaurants should move to induction

No Wok Hei with induction cooking. This is very important in chinese cooking. The dishes are just average without it.

Can you make an addendum video that shows how the pans are cleaned? Are they switched out to the dishwasher after each dish? Does the cook wash it himself at the side? Always in awe when stainless steel pans are cleaned so quickly.

Not sure about this kitchen since it's so small, but most kitchens will have a lot of pans and after a pan is used it gets swapped out to the kitchen porter, who can clean it within about 2-3 minutes if the kitchen is very busy and going through lots of pans. The kitchen porter scrubs the pan and puts it through an industrial dishwasher, which has cycles that last around 1-2 minutes.

i just realized sous chefs in new york are equivalent to cooks in most las vegas strip restaurants. sous chefs in las vegas strip doesn’t really cook in the line but only expedite during rush and make all the paper works.

This woman needs to learn to do her job first before trying to bully others just for the sake of it. No one cares about the pattern of a sauce on their food but would care if they don't have a competent waiter to bring their food on time without mistaking the table
