Hot Tip / Pro Tip: They add Pineapple to the stacked El Pastor, not just for flavor, but also to tenderize the slices of meat, which are typically cheaper (tougher) cuts, since this is a (delicious) working class meal!

Lebanese (ottoman empire people also) brought these technique of cooking to Mexico. Which the Mexican culture started to use pork instead of lamb meat

So during the day they add raw meat that needs hours to be cooked in the choricera along with the already cooked rmeat that is ready to be served? Mhhh I guess I would stick to al pastor and nopales.

Calling Latinos!!! Is 'tripa' really intestines, or is it just tripe? I like tripe, but I don't like (large) intestines.

*Tripa* is literally the small intestine. *Tripe* is the cow stomach lining. Tripa tacos are absolutely delicious! Ask for them crispy. That's the pro move. Tripe is also delicious in a different way. Better in soups or stews since it takes longer to cook. We eat as much of the animal as possible and respect the sacrifice of the animals life for our sustenance.

Arab immigrants brought the vertical spindle roaster with them to Mexico City to make shawarma with lamb, beef, or chicken. Mexican street cooks liked what they saw and tasted, and then adapted the tool and used it to make Al Pastor. It’s not that weird or controversial.
