5 Cups Pitted Halved Tart Plums
4 Cups White Granulated Sugar
1 Cup Water
Prepare canner w/water & 3 tablespoons of vinegar. Cover w/lid and bring canner to a boil.
In a large, deep stainless steel saucepan, combine plums, sugar & water. Bring to a boil over medium heat, stirring to dissolve sugar. Increase heat to high & boil hard, stirring frequently until mixture thickens. Remove from heat & test gel (I explain in video how to test gel stage). If gel stage has been reached, skim off foam.
Heat sterile jars in 275 degree Fahrenheit oven for 10 minutes to finish sterilization. Simmer lids & rings in saucepan. Ladle hot preserves into hot jars, leaving 1/4 inch at top of jars. Get out all air bubbles. Wipe jar rim with/vinegar. Center lid on jar. Screw jar ring down until resistance is met, then increase to finger tight. Place 6 pint sized jars into canner, put on canner lid and bring back to rolling boil. Once at rolling boil, process pint jars for 15 minutes, turn off heat & remove canner lid & let jars cool in water an additional 5 minutes before removing from canner and placing on clean towel to cool. Let jars cool overnight. Remove rings the next day and if all lids popped and sealed, jars are shelf stable. If not sealed, put jar in fridge & use contents within one week or put contents in freezer and freeze. #canning #harvest #pantry #foodie #yummy #delicious #fresh #fruit
