If you think that BTC is a payment currency you don't understand BTC. It is a store of value, a way to build wealth. You buy it an never sell it. That way your net worth builds and you borrow against it. ..use it as collateral. If you want to make payments you use XRP or Monero but not BTC because it's price appreciation will get away from you and you won't be able to replace what you spend; ultimately losing part or all of your net worth. Bitcoin and Dogecoin are extremely similar. Bitcoin was made for investment and Dogecoin was built on the Bitcoin code to do transactions quickly and extremely low fees. For 24/7 payment/transactions you want dogecoin, for 10 year investment you want Bitcoin.

Demand fluctuations can also arise from people trying to make money by buying and selling large amounts. You can trade BTC and other coins 24x7 and the barrier to entry is very very low compared to lets say trading commodities. The trading actions with large amounts is impacting millions of people and this may continue.
