So you put it in the oil when it temped 85 degrees...what did it temp when you pulled it OUT of the oil? and/or how long was it in the fryer?

I pulled it out at about 100 degrees! It was in there for about 15 minutes.

in that model turkey fryer lifter, the vertical spit unscrews from the base. no need for a slit. unscrew the spit and pierce thru with the rod end of the spit, then re-attatch.

If done several of these, never smoked it just fried and it came out perfect every time

What about frying it with the oil at 300?

If we fried it too low, we risk the oil seeping into the roast, making it oily and soggy. WE wanted to try and avoid that as much as possible.

We just used vegetable oil!

Is really just reverse sear in oil.
