Cost per ounce is always a little more because you can pour smaller amounts. There tends to be more spillage, or more foam if people don’t pour the beer properly. But if you want to try many different types its worth the extra money. Theres an american company, “Pour My Beer” that has been installing these self-serve beer walls across the U.S. & Canada

I would be curious what data is collected. As a patron, I would want to know what my current bill is throughout the visit. As an owner, I would want to know not only the financials but which selections patrons try together so I could offer suggestions, "if you like this drink other drinks to consider....." OR "this drink goes exceptionally well with the food you ordered" Secondly, this set up could eliminate overhead such as a bartender and servers and be open 24 hours a day or strictly at peak times depending on the local market.
