13:53 The logic of drinking something hot while you're in 'fire' is that the element which give spicy taste is oil soluble. So hopefully with some warm water it will melt the oil as it will bring the spice with it.

Correction: not warm water, but hot water. The warm water is not hot enough to take out the "fire" from the sambal, it (warm water) only makes it worse...

The easiest way to get rid of the spiciness, is just open your mouth wide and let the saliva dripping out, push it out off your tongue if necessary.. (I would recommend you to do this on a sink or in a bathroom..) Just took

To be consistent, you could also use same type of food as a base to compare all the different sambals. Use a spoon of rice, or fried tofu, a fried tempe, or even a slice of cucumber, or any other veggies for a variety of sambals. You will then able to find the unique tastes and pick the ones you like. Good luck...

Susan, i think you have to try sambal andaliman, it comes from batak ethnics.., usually the sambal combines with babi panggang ( pig fried ), you can find it on jakarta, the restaurant called lapo or BPK ( Babi Panggang Karo).

I read somewhere on KZbin in the comments, that you can completely neutralize the heat in your mouth with some liquor. I never try that obviously because I don't drink alcoholic beverages but maybe you can try it the next time the heat from Sambal/Chillies hit your tongue

Try to travelling to java island, and try signature food every place you stop. My suggestion, try East Java city. GO to Surabaya try Lontong balap, Malang , bakso/bakwan Malang. And Visit my hometown, Kediri. Try one of varian of pecel(cuz in East Java it has 3 famous pecel varian. One is pecel pincuk from Madiun, two is pecel Blitar and last is pecel Kediri). And don't forget to try rawon. If you visit Kediri, maybe i will guide you. 🤣
Best part of balinese culinary is "Morning market"... Morning market is located in every sub region in all of Bali.. it is open about 5-8 morning. They sell so many different Snack, small food and breakfast... My favorit is to try different kind of 1000-2000 Snack price.. mostly Made from coconut, palm sugar, klepon, nagasari, etc etc.. i don't know many of them... The problem is you should wake up early to reach the morning markit 😅

Warm water actually really works, I once get a challenge from friends to eat very spicy fried rice at a hotel restaurant. That's really spicy and my friend drinks all the ice tea stock on the table for himself. So I go to the restroom to wash my face because I feel my face so hot. And I realize that the tap water in the restroom sink has a cold and hot water tap, so I combine it to make warm water and use it for gargling (I didn't drink it, since tap water in here is not for a drink). I do it again and again until all the hot and spicy feeling is gone from my tongue. Yes, it feels burned at the tongue at first, but if you are brave enough to hold it for some time the spicy feeling will completely go from your tongue.
