He was recently diagnosed with Parkinsons and dementia, and my mom doesn't cook. I couldn't stand to see him eating nothing but Tacobell and premade snacks. So, I started preparing meals for them the last couple of weeks. It's been a bit overwhelming, but remembering your Cooking for Community videos, helped me push through that. I plan on re-watching them for ideas. Thanks so much for doing your videos! They've been so helpful!❤

Could you do a series of 2 weeks of affordable sandwiches? 1. Fast food lunch can be expensive. 2. Bolonga and hot dogs get boring. 3. Lunch should give you energy for other half of the day. This could help home schoolers, work-at- home types, brown baggers and people like me stuck in a rut. You could call the series 'Super Sandwich to the rescue!'

Well-Bred Kale Salad 1 lb fresh kale, stems removed, finely chopped 4 Tbsp olive oil 1-2 cloves minced garlic 1 Tbsp lemon juice 1/2 Tbsp black pepper 1 cup dried cranberries 1 cup slivered almonds, toasted 1/2 cup parmesan cheese Salt, to taste 1. Wash kale thoroughly, remove stems; finely chop leaves 2. Mix olive oil, lemon juice, garlic and pepper together. 3. Pour mixture over kale and massage with hands. Let sit for 3-4 minutes 4. Toast slivered almonds 5. Add cranberries, cheese, and toasted almond slivers to kale and toss

I use breakfast sausage, onion, garlic, broth, potatoes and CARROTS, and I add spinach to the bowls and ladle boiling soup over it because the leftovers keep better without the greens. Topped with tons of parmesan and/ or a slice of american cheese.

#1 suggestion for kale, take out the rib, chop, and massage (scrunch with your fingers) and then add it to any pasta salad recipe. it adds a ton of vitamins and minerals. tastes delicious with anything vinaigrette based. the key to eating it raw is the massage, breaking down the cell walls mechanically like that really gets rid of the bitterness and makes it tasty

I use kale or spinach as an addition to many soups. I don’t always make soup with a recipe, but love the added flavour, colour and nutrition that kale provides and easy to add. I make a version of your soup today but without the cream. Not a cream soup fan and without is more budget friendly. Sausage provides such a flavour boost. Added beans can help stretch the servings and make it more budget friendly. I use some additional vegetables. I would love to see more soup ideas. I think they can have a great place in your various budget series either with soup as a starting point, or soup made from something you have leftover like chicken or ham. And yes I would love to see more vegetables where possible in those series. Kale is a great contender in that role.

Not a kale recipe, but a way to freeze kale (before it goes slimy): De-stem the kale leaves, chop them however you like, rinse and spin dry (in a salad spinner if you have one, otherwise just dry as well as possible). Pack in freezer bags/containers (label with the date)...and that's it. Kale ready for soups/stews (but not for salads or kale chips)...I add kale and spinach (that I freeze, as is, if the bag/box I bought is looking weary) to many dishes...because I love greens...
