I’m Mexican-American and I have a friend whose parents are from Nicaragua and through him I got a taste of real Nica food. By FAR my favorite Nicaraguan food is the Nacatamale, I like it better than Mexican tamales. My favorite is the Estelian Nacatamale, it’s stuffed with chicken instead of pork and it’s from Esteli and Ocotal, Northern Nicaragua.

She forgot to add the lard to the masa while it cooks. If you don't add it the masa will be hard as a rock. The lard helps keep to keep the masa firm yet soft, the more lard you add the softer the end product will become so its an experiment on that ingredient until you get the proportion you like. Just to give you a clue even though the masa may look soft while it cooks it will harden up when it gets boiled. So you don't want it super soft nor hard but in the middle. It should look and feel like a bread dough that kinda sticks to your finger but release on the side of the pan when its being cooked.

Ok. A couple of changes. I prefer fresh masa (or Nixtamal) from a tortillería if you can. Best to get "Masa quebrada, simple." That means less fine if a grind and without any added Manteca. "Masa fina" is for tortillas. If not then Maseca. 2) The recado added to the masa needs tomatoes and naranja agria. Ir is better if it's passed through a sieve (don't want tomato seeds or skin, or pepper skin, they add bitterness) Should have added more hierbabuena (mint) and it should have been put through the blender too, not just added to the masa. Most importantly, use Manteca for the masa, not cooking oil. Put the Manteca in the pot first for cooking. Buy some pork belly and make your own. You can fry or bake it to render out the manteca. Sometimes the local carnecerías sell their own Manteca which is often really good. Don't use any commercial lard like Crisco. Yuk. It's unhealthy (hydrogenated) and tastes nasty. Don't use aluminum foil. It gives a nasty bitter metallic flavor to the nacatamales, and ruins them even if it's easy. It's not that hard to use the banana leaves with the right technique. Boil a big pot of water. Cut the sections of leaves with scissors if they aren't already cut. Put them in the sink and pour boiling water over them. That softens them, cleans off dirt and oils, and removes some bitterness from the plantain leaves (hojas de chagüite). Most importantly, use two leaves for each tamal. Ojo!! They have to be arranged on a bias or diagonal pattern to each other and to the direction of the folds, or.. they will split. Not like in this video. You can clearly see the direction of the banana leaf fibers. Place one on top of the other, but offset so that they form a star with eight points. After you fill the nacatamal, lift the two sides and fold together. Make sure it's on a diagonal to the fiber. That means that neither of the banana leaves should be square to your body. Each should be at a 45 degree angle to you. Once the first fold is complete, form the tight rectangle with the ends, and tie it up. I usually cook mine 3-4 hours. I would suggest boiling a big pot of water while preparing the tamales. Then carefully pour that instead of cold water over the tamales in the cooking pot. That will save you 45 minutes to an hour heating the water to boil.

my family makes it with pork and pork fat pieces (basically chicharrones), tomato, raisins, plums, rice, though no potatoes (iirc). and we make the masa with lard bc when we eat nacatamales it ain't to be healthy!

Medium high for a medium boil. The pot should be steaming. I cook them for 3 hours. If you add the water already boiling that saves an hour.

You can mix orange juice and lemon juice in equal parts and that should give you a similar taste to sour orange. Sour orange is a like an orange but it has a slight bitter taste, it is widely used for cooking in the Caribbean.

It’s not grapefruit but very similar, grapefruit is a hybrid from crossing pomelo and sweet orange and sour or bitter orange is a cross between pomelo and mandarin orange. It looks like an orange but with a rough exterior. It’s used as marinade in the Caribbean and they use it for marmalade and sauces in Europe.
