Thank you so much for the video Papa Joe. I’ve only seen the foil boat done on offsets. I was scared to try it on my weber kettle because it’s so close to the heat but I will try it now. The issue is I’m going to do it the day before so I will have to keep it in a warmer or a low temperature oven to keep it warm til the following afternoon. When I do that do I still keep it in the foil boat or do I need to wrap it in foil or butcher paper or just keep it in the full boat in the warmer oven?

Thanks for watching Itr. I think butcher paper works best for the long rest. Wet the butcher paper down with some beef tallow and wrap the finished (cooled down) brisket. Put your warmer on 150 degrees. If it's only one brisket, add a pan with some water to lessen moisture loss from your brisket.

Cj, DennyO here, what did you do to the fire in between the 9 min mark? Prior it was out and after it was Hot? Re lit some more fuel??

Nothing done to the fire at that point Hawkeye. Probably just reached a point where more fuel was burning. At one point I did bank all the lit briquettes in the corner, reload with fresh briquettes and start the burn back in the opposite direction.

I've finished briskets in the oven before but they've been fully wrapped. I think the foil boat will work just make sure you're satisfied with that color first.
