These are some of the best birds I've ever made. I just can't get over the difference in flavor compared to using a defuser. It's a night & day difference for sure.

Great Video Joe I'm curios on your opinion on firebaskets for long cooks, lava lock, hunsinger vortex,and arbor manufacturing. Any of these that have impressed you. I know you could add expanded metal around stock grate.

It's hard for me to answer that brother.. I'm a big fan of the cajun bandit extended fire ring.. I've done both long and fast cooks and had no issues. I've never owned any of the other products you mentioned. Now Greg over at The Woodshed Smoke & BBQ with Slowhand designed a large fire basket for both the wsm 18 and the 22.. Unbelievable burn times.

Seeing is believing and the proof is in the pudding, or eating the pudding. Everything looks like it turned out perfect. I have a weber hanging extension no longer available, and many wsm users purchased the Gateway hanger which also fits the WSM. This is another great way to go in hanging meat in a wsm. Amazing Great cook brother.

Like the mod. Love the chicken too! I have one of those weber hangers for my WSM18 - but have not used it yet, one of these days though... On my UDS i hang using the Weber GBS grate and it works really well.

My first smoker was a WSM, I wish I still had it. Sometimes I would use chunks and other times I'd use chips. for the chips, I'd take a tin can and punch a few holes in it and put it in the center of my charcoal and put the chips in the can, that would help them last a lot longer than actually putting them in the fire. I like your mod but I'm probably a little more basic and would have used some all-thread with bolts screwed onto the ends. Yup, that chicken looked wonderful, made me hungry sitting here watching it.

Thank you.. I thought about using threaded rod but I like the looks and durability of the round stock with the collars. I chose round stock to ensure they won't bend when loaded down with heavy meats. Thx for stopping by

Chicken looks fantastic, I love barrel cookers I made two of my own and use them all the time. One of them stands two barrels high with a rotisserie in it and will hold a lot of meat. Joe, those birds looked fabulous! Skin looks perfect and all that juice! Did you brine or inject? Gotta get me some of Sal's ribs. I hear the No1 won a blind taste test competition on steaks from another You Tuber. Plus Sal does some great vids and taste tests on beer. In the past I have placed two whole chickens on the top rack in the WSM, but thinking "halving and hanging is a better way to go to achieve color and crispiness. Always learning!! Thanks Joe

No.........You didn't need to get a pbc. Look what you made with what You already have. Nothing against PBC.......but with the Pit set up you have..........You now have Options! \m/ And You have shown people out there the possibilities that they can do with a little imagination. Thank you Ken..! I have nothing against the PBC either and would still love to own one to compare but this wsm barrel cooker mod will cook twice the meat. I just hope Cajun Bandit picks up on this before other companies do. I don't have enough skin in the social media world to make a difference.. I found the recipe for the Hot Rub..! It was doubled up with another recipe and didn't see it. I'll put it in the description box.. I'm working on it know and should be up within the next 10 mins. Thx

Joe's BBQ House "Hot Rub" recipe.. This recipe makes 2 lbs and fits perfect in a 33oz shaker Put all ingredients in a bowl.. All measured in cups Ingredients: 1 cup of Ground Cayenne Red Pepper 1/2 Paprika 1/2 Granulated Garlic 1/2 Coarse Black Ground Pepper 1/2 Turbinado Sugar (raw sugar) 1/2 Kosher Salt 1/4 Chili Powder 1/4 Onion Powder) Mix all ingredients into a bowl and add to shaker. A funnel works great for this. If mixing directly into the container then you'll need to hold back on any 2 ingredients. Shake the container well and add the remaining ingredients..

I love my aww wsm, that's a cool mod Joe. I just use the gateway hanging kit, since a wsm is literally a barrel. I've done chicken, ribs, a few other things. Tastes great for sure. #therootboycooks Colorado

Thank you.. I'm new to hanging meat over hot coals and gotta say I'm loving the flavor. I did some ribs the other day that had awesome flavor. They were on for only 3 hours unwrapped and they were fall-off-the-bone tender. A little too tender for my likings but next time I'll start probing at about the 2 hour mark. Thank for watching..

@@BBQJOE Ribs is something I've never been able to get real tender by hanging unless I wrap for some reason. They are either in the coals or a bit tough. I've heard some others happy with the results without wrapping though. I'm glad those mods have worked out well for you! Looking forward to seeing what else you get into!

#The Root Boy Cooks. I like your mods I I have the jumbo jow with a Cajon Bandet ring. Thinking of doing the same. How much does the chicken hang down? I am sure ribs ect will hang to low, in my Jumbo Joe. Southwest TX. TheRootBoyCooks

Thank you.. The bottom of the half chicken hung down about a 3" below the ring. About where the temp prob is on the center section of the wsm. If using the jumbo joe I would recommend quartering up the chicken but only take my opinion with a grain of salt cause I don't own a jumbo joe with the ring. I have Webber 22" with the smoker ring and with the rotisserie ring added I would only hang quarters. Now I'm sure if you was to put the food on the rack it should be fine. Let me know how it works out if you decide to try it. Thanks for the comment.

wonder about doing that cook but with the racks instead of hanging, once the rain goes away here, I think I am going to try that cook, ie, no water pan so juices can drip down. I have the cajun bandit extension, so I think I can use the two top racks (and maybe your mod with the 5/16 bolts to add one more rack) thanks for the video! #rootboycooks

I agree that it makes some of the best chicken I've ever had in my life. You need to try some spare ribs next.
