Is it picking up the time stamp from the data of when the photo was taken or does it stamp the day you add the time stamp?

Switched from android. Big mistake. Everything about iphone is selling a thid party app. Cant even pause a video while making it. A 200 dollar android can timestamp and watermark a picture and pause while shooting a video. Didnt have iphone 2 weeks got a notification to buy icloud storage for 99 cents a month. Is that different than the storage the phone comes with?
