Yet another splendid thali, thank you so much! Your energy is inspiring and i love to watch you cook. An aside, Varan means basic dal with no tadka, only salt, jaggery and ghee added to toor cooked with haldi, hing. It is heavenly with a squeeze of lime on top and potato bhaaji. Also sheera is made in milk only, maybe a family tradition, and the dry fruits were not fried, only washed well and dried, that’s how my Aie and maushis made it.

Very nice. Just a little addition. This is tadka wala regular varan. During festivals authentic varan is made by cooking tur dal with haldi and little excess of hing and less water. Later dal is mashed nicely. Keep for boiling and add jaggery and ghee and salt to taste. Consistency is thick like sauce. Tastes heavenly with steaming hot rice and leamon pickle.
