I agree that your channel is very motivating, I’ve never thought of blanching potatoes and keeping them in the freezer. Very interesting idea, I usually just prepare a potato or two for myself as I live alone.

Thank you for your kind comment. I am on my own as well, but like to have them in the freezer, plus it saves me money. Sometime the potatoes are $1.39 per lb. ☹️

You are very inspiring to me. I could watch you for hours. One of the best, motivating channels on youtube. I enjoy your nature walks. Loved seeing the mossy rocks. I miss my walks in nature since my cancer & heart surgeries, but i will resume inside walks at my community center jan 2. I watch another lady who does the vision boards. Your video is very motivating. Since I am a widow and live alone, I don’t always make “elaborate”meals so I like you suggestions. I love sweet potatoes. If they are baked for a little more than an hour, they carmelize and it’s not necessary to put butter on top. I like your meal planning and ideas for meals. I have a couple small hamburgers (sliders) in my freezer and the recipe with eggplant and tomato sauce sound like a good idea for a simple recipe. I use my air fryer a lot to make quick and easy meals.

I don’t blame you for recycling the aluminum foil. Dry wasteful and expensive to do otherwise. I use aluminum foil, and never used to save it. I thought about it and realized I could wash it while doing my dishes , wipe it dry and use it the next time. It does not last forever. But I can get multiple uses out of it. I love baked sweet potato, very simply with just plain butter. I don’t like it when people put cinnamon, brown sugar, marshmallows, etc. to me they are very sweet unto themselves.
