Ethan is my favorite because he is just a normal dude who ends up dead but still fought for Mia, then later on fights for his daughter. Even after dying a second time. Leon and Ethan genuinely are some of the coolest protagonists in any game I've played. Only comparison I have with another character in a somewhat similar situation is Isaac Clark.

If you look past the insanity, you can see that the bakers were nice people before the biohazard hit them.
