Jamaican don’t use measurements, we go by feel. Same way we play music by hear. No measurements we not soldiers dressing the same way. That’s why our food taste different from every other cook, and why our music is varied. But if you not Jamaican you are seduce by the concept that everything should look the same and taste the same.

What i like about your channel is, you have some of the "off the beaten path" authentic side dish recipes, the juice recipes, all the different dishes that of the elders i grew to know made, even the dishes that you can't find on many Caribbean restaurants menus..i am so pleased to learn them and do them at home. Respect to you and God is blessing you.

Hi Debbie, I am Jamaican but living in Canada since the 80s, and watching you on May 22, 2022, because I have just searched for how to make Jamaican Toto. Now, I am a vegan, I eat only plant-based foods and you have added 2 ingredients that I will not use. They are brown sugar and butter. For baking in Canada, vegans use Maple Syrup, but what can I use to replace butter? Can I use Olive Oil? Just so you know, the cake looks really good and while you were cooking, it brought back memories of my Jamaican culture. I await your response and stay safe in this era of diseases. Blessings!
