Hey aunty pauline greetings from Guyana 🇬🇾 I am enjoying watching you cook and I realize that all Caribbean people eat the same ingredients but each country has their own methods in the preparation I think what you call tun cornmeal my mom made it with ocra she would put the ocra and onions tyme all the fresh seasons and salted beef cutup small for flavor and when the ocra and everything is softened she will turn the cornmeal in it on low heat until she thinks it cook she made that with steamed fish but we call it in Guyana coocoo and steamfish pleasure watching you cook much love to you and your family jah blessings ❤❤

I learnt from my mon. The trick it to not just stir but while you turn u rub against the side of the pot. This method gets rid of any lump. My mom was absolutely good at this, she does not even wet the cornmeal, she just sift it into the pot, let it boil until it is consumed by the water and then starts the turning process. She also served it in a ball,, she puts serving amounts in a bowl and toss it until it forms a ball. May her dear soul rest in peace!!

Here in the Bronx when We buy the coconut we have let the guys in the store break them for us and see if they good before we buy them. Sometimes they break three or four before they find a good one.

My parents, grand parents and great grand parents were born Jamaican Who knows before this. - I have often said mi sorry me never born on the beautiful island, though I have visited more times than I can count starting from the tender age of four to meet my grandmother. This plate once again looked delicious. I can see the West African heritage in the tun cornmeal as it resmbles fufu as it is called in Ghana.
