My in laws are Cajun and have made sausage for years. Everybody that eats it wants to know what the recipe is. It’s so simple that when you tell them they find it hard to believe. It’s one teaspoon of salt per pound of meat and 1/4 to 1/2 teaspoon of cayenne pepper per pound of meat. We make it with ground meat smoked and unsmoked. We also make andouille sausage which is smoked and uses chunked meat instead of ground meat. It’s mostly used for cooking.

My wife prefers closer to 1/4 teaspoon per pound. It’s still pretty spicy with the lower amount.

Hello Randy , I'm curious. Do they have liquid smoke at the American store there . I forget that actual name of it . If they do then use either Mesquite or hickory to add to your recipes. As far as using your smoker , if you find dead fruit trees like apple 🍎, pear🍐 , plum , get the dead wood chip or cut with your band saw into chunks. It'll put a really nice flavor in the meat your smoking. Just a helpful hint . I use liquid smoke in butter to inject my turkeys every year then I'll use either Mesquite, Hickory, Apple, Cherry woods to do the actual smoke with. It's delicious

I Got liquid smoke from online, and I do use it on beef jerky and on some dishes I do. I use coconut shell to smoke I don't have those fruit trees here that you mentioned above. And we will try using guava fruit tree they say its good as well. Thank You Ed for good hints.. You and Wife have a great day.

Here is a very good South African Sausage recipe ... If you don't have beef, lamb or only pork is also ok. Makes 3kg of sausage . Grabouw boerewors recipe ingredients 1.5kg beef, use a fatty cut such as chuck head or the top part of the brisket 1.5kg pork, use a fatty cut such as top belly or shoulder 50ml whole coriander seeds 3ml cloves 2ml nutmeg 5ml pepper 5ml vinegar 25ml red wine 25ml brandy 25ml salt 85g hog wors casing (the butcher will know these as ‘32 long’) Preparation method Rinse the sausage casings in cold water. Roast the coriander until light brown. Take care not to burn it as this will make for a bitter flavour. Grind and mix the coriander with all the other spices. Combine all ingredients with the meat and then mince coarsely. You can stuff sausage casings by hand or using the sausage-making attachment of most kitchen mixers. Open the end of the casing and ease open the first five-centimetres in order to fit it onto the stuffing tube. Pipe your mince mixture into the casing. Remember not to stuff too tightly or the sausage will burst. The sausage mixture is best left to stand in the refrigerator overnight in order for flavours to mix.

I cant drink beer either because it makes me fat - haha. When is the baby coming - I see its a boy. I am 62 and have 6 grandchildren, and while its super to have a child at any age - ive been there done that and wouldnt want to do it again.

I'd just buy whole pork bellies and smoke them in a home built smoker! Cant live a happy life without Bacon! Same goes for smoked fish! I can live without ham but Bacon, no way!

Buy a good meat grinder and grind your own ground beef. The ground beef here sucks. Frying a kilo of Philippine ground beef gets you 1/2 kilo rendered fat, 1/2 kilo tiny fried beef pellets ( for lack of a better word). It is horrible for meat loaf, meatballs, and burgers. I grind sirloin with some beef tallow and brisket. Comes out fine.
