Hi! I love your bread recipes and have been able to make some good breads. However, I never get that oven spring as they call it. It rises very well beforehand, but not in the oven. I use good quality breadflour. The sourdough is active, and I have a good oven.

This is so far what I got from other places: Preheat the oven: • Preheat your oven to 375°F (190°C). 8. Bake the bread: • Once the dough has risen, bake the bread for 25-30 minutes, or until the top is golden brown, and the loaf sounds hollow when tapped. 9. Cool the bread: • Remove the loaf from the pan and let it cool on a wire rack before slicing.

@@editorialrightcut9947 Those instructions sound more like they would apply to a rustic boule than this sandwich bread. I also want to know the baking instructions. Other sandwich bread recipes I have used say 375 degrees for 40-45 minutes. I would probably start checking it at about 35 mins as my other sandwich bread recipes are slightly bigger quantities. I use an instant-read thermometer to check my bread. Should register at least 190 and no more than 200 in the center.
