When eating the ramen the word you were looking for is actually itadakimasu which is closer to bon appétit!. Kanpai is more like cheers and is used for drinking.

They aren't giving out Suica or Pasmo cards any longer because of microchip shortage. If you are a foreigner, you can still get a Welcome Suica or Pasmo Passport IC card. But they expire after 28 days. Really surprised you didn't mention this or know about it.

note that you cant get a physical suica card as of Aug/2023! if you have an iphone you add one in your wallet thru transit cards also, it helps the yen is down right now as well :)

When it comes to Sushi, you can find good quality in the US... But expect to pay an arm and a leg for it. But that is usually true in all countries that Foreign Food is often more expensive, while local food is much cheaper.

I would argue that MOST foods taste better from their native regions where they originated from (so in Japan, as you found out, Sushi for example). I mean even "American" Mexican food is nothing like authentic Mexican food. The only exception to this rule of food tastes might be IF you found a restaurant that was run by someone who was from that area and they used authentic ingredients and recipes, then it may taste just like if you had it in Japan or China or wherever.

Japan has an amazing “coffee culture” especially their drip coffee game is top shelf. Look for an old authentic “kissaten” that looks like a speakeasy (which is different from a “manga kissaten” be careful).
