3:15 I’m pretty sure the reason why bad restaurants tend to have gigantic menus is to either 1. To Look impressive and competent by having a huge lineup of food/items they offer. And/or 2: mass appeal. They don’t wanna risk limiting their potential customers by sticking to one kind of food, so they make huge menus so If by any chance they get any kind of customers, they’re probably bound to order SOMETHING they like from the big menu.

It's a little of both. The question is whether or not you can successfully trick your customers into thinking they have more options than they actually do. One of the restaurants in my area is called Bacalli and they have an absolutely massive menu. But if you actually look at each item on the menu, it's more or less the same thing, but what you're changing is the type of side or the type of sauce. The result is that one roast chicken is now suddenly six items. Chop it up and you can use it for the curry or the fried rice as well. Now 20 items can suddenly be listed as 140 or more.

There's a restaurant like that where I live (Guam) and I imagine the reason it's the most popular restaurant on this island is because it just has so much variety. There's something there that everyone will enjoy. Personally, I usually avoid it because it's too packed and I'm not willing to wait a long time to receive some pretty average food. I would definitely say that when I first opened the menu and saw how many items they had, I realized I wanted to order something hard to mess up, entirely because the size of the menu made me expect lower quality. They don't specialize in anything, so everything is going to be very middle of the road For the record, they do actually have some very good food. However, you won't see me ordering one of their sirloin steaks. The spaghetti, on the other hand, is fantastic. Worth a visit if it's not rush hour and you just want something cheap and filling that doesn't taste half bad.

A lot of it is just owners who don't know how to order product, so they end up with way too much stuff. And their original head chef can't convince them to trim it down, so they just make a big menu, and it ends up sticking because the restaurant is "successful" at first.

Went to Leone's earlier this year for valentine's day. Food was very good, service was satisfactory, and Michael seems to still be the owner as I saw him walking around the dining area. The main difference I noticed was the decor, it was quite different from the renovation Gordon and his team constructed. It was more what you'd expect from an Italian restaurant; brick walls, a black and white mural above the bar area, and all wooden chairs and tables. I honestly think it looks better now than what Gordon's team did.

Reviews are weird sometimes. There is a restaurant in my town, a little drive-in place that serves burgers and Chinese food. They consistently get one-star reviews online, and yet that place is non-stop busy at all times and everyone you talk to seems to love the place. They're not even in a good location, either.

You should cover the episode about the Italian restaurant that was owned by identical twins. It was filthy (the bottom of the table was caked in old gum), and the owners were behaving like children. Gordon didn’t do a lot of yelling in the episode (when he did during the first dinner service, one of the owners started bawling and completely shut down, so Gordon had to switch strategies), he just needed to help them understand how to be owners. They actually took Gordon’s changes to heart. A KZbinr actually went there to eat and met the brothers. He even did a follow-up where he flew them out to Vegas to dine at one of Gordon’s restaurants (they found gum under their table). They kept the restaurant going for almost a decade before they decided to close the place and retire. Gordon apparently visited on their last day. Even though it’s now closed, I’m calling it a success.

Big menus aren’t an issue for pizza/pasta joints, you’re just combining different bases, sauces and basic ingredients with nearly identical cooking methods. Just have a big fridge & freezer and train the back room well and you’re set

That’s actually one show I absolutely can’t stand. I hate him so much. He’s too aggressive, over the top, fake, loud, and never shuts up. He also makes a lot of bars worse off then they were like making that one bar into a corporate bar where no one showed up. Tbh, I would have to skip a lot of Mermaid Grove’s videos because of that show. It’s not even so trashy it’s good. It’s so trashy it’s obnoxious.

So I wanted to address something that the channel creator might wonder or already know.. Some viewers may skip ahead to the middle or end of the video to find out what happened to the restaurant afterwards instead of listening to the entire recap of the episode.. I hope the channel creator and fans don't take this as an insult since there's already a huge following of Kitchen Nightmares that has already sometimes seen the episode multiple times, which makes a recap sometimes a little boring.. It's just nice to be able to see what happened to the restaurant in a detailed way, and this is definitely the best channel to do so!

Hmm... I'm inclined to agree. Personally, I don't mind them recapping the episode even if I've already seen it, but I can see other people wanting to just skip ahead. Perhaps they should consider tightening the recap so it takes less time, and perhaps giving it more of a personal touch (like opinions and anecdotes) as opposed to just describing the episode we already saw.

He used generative AI in the video before that one. I don’t know why he can’t just use stock pictures. Just say it was a bad decision and have comments back. Unless he continues to go on that route. @ if you think using stolen images is fine then keep on keeping on. This content is barely just describing episodes of a television show with some analysis. If All he has to contribute is that and his editing and he can’t even scrounge up stock photos for spooky stories for 10 minutes then it really shows how much he relies on, just describing a television show. The weird thing is how he reacted, not admitting fault or learning from a mistake. Covering it up and being afraid of backlash. If he’s confident about his decision to use generative AI then just double down and accept the backlash and continue on with the audience that accepts it. It’s like the difference of reacting to cheating in a school assignment, learn from it and never do it again. Or just keep on doing it forever. Or just say “my bad” and look up stock photos. If you want this to infect his other content, go ahead. I hope that script for those scary stories w wasn’t just from an ai generated script either… or worse just pull straight from Google.

And I usually disagree with his points of view sometimes when I feel he isn't taking into account of the show itself or how certain things in the business work. I understand generative ai for pictures can be considered lazy and I understand where people are coming from with the whole generative ai art it's others arts compiled in a new way but I also see all art as subsets of other art. It's like saying making an adirondack chair is ripping off the original creator of the Adirondack chair. All art is copied from other art. By technicality every office chair is a ripoff of Jeffersons design. But that isn't how that works. For someone who has no skills to create or income to pay for art generative ai art can be a way for someone to create small vignette for something that is mostly listened to and not watched. I understand your opinion tho

Stock images, man, public domain images. And if you want to make your own little collection of generated stuff, get an engine that has the catalog behind it and just feed it public domain images to get variations of them. There are ethical ways to use generative ai. Also, no one has absolutely no skill at art, if they never try. You can’t improve if you never start up and get better. I just hope it doesn’t become a slippery slope and he starts using scriptmakers. I didn’t run that spooky story video he made through google, so no idea if he’s already started that dark route.

3:03 help??? It’s so weird coming back to this show with experience of working at a restaurant. I work 5-6 hours a day, because I’m part time. And I AT MOST sit down for 30mins- aka my break when I work 5+ hours. Working at a restaurant means you’re always on your feet and your always moving around. It’s not for everyone.

You can own a restaurant and not run a restaurant. However, you have to have it set up to do so and you will still need to go in on occasion and kick butt. You will make less because you need to pay people to run it for you. However, that is better than losing 4k a week.

I can attest that my family doesn’t really appreciate smaller menus. They think it’s too limiting and offers very little choice. While I think those points are valid, a smaller menu is also easier to work with and increases dish quality. I knew someone who worked at a restaurant which had a large menu and while the patrons liked that, a lot of the food needed to be precooked and made before hand otherwise the kitchen would easily be swamped. So I believe the ethos of having a smaller menu is a focus on quality over quantity.
