Most people generally do not look forward to confrontation of any kind. Many of whom would stomach receiving a wrong order, bad service, and or a combination of errors from a restaurant just so they don't have to speak up. The last thing they would want when going out is to go through the embarrassment and be judged by strangers for doing something some may view as petty. Similar to under-tipping for bad service. There's too much of a risk doing so than to just pay the perceived "right" amount and to never come back again. This is why poorly ran restaurants like these keep claiming their businesses to be doing well despite being so heavily in debt.

It always fascinates me when these folks get super upset or defensive when Gordon Ramsay harshly critiques their food. I get it, being harshly critiqued hurts like a bastard, but they DO know who Gordon Ramsay is before they call him in, right? If you know enough about Gordon Ramsay to think he can help you, then you must know his most defining character trait is he is a brutal and savage critic. When i was working as a prep cook and dishwasher for my local italian restaurant i took cleanliness and food safety very seriously i would sanitize surfaces and wash my hands after touching any kind of meat or seafood, i would sanitize the knives i used if i had to use them later If you were to serve rotten food to someone or screw something up with food safety you would be charged with attempted poisoning and spend time in jail over it if reported

So, looking at the food inspection history that he showed here, some of the violations are pretty critical (red) well anything that is still a violation but not critical is listed as blue. For example the chemicals, it could be as simple situation as they have a sanitizer bottle in a bottle listed for a glass cleaner.
