You rock I love your meal plans and have them all. Please, we beg of you, make a one single cookbook with all your recipes. It would be worth gold, and most of us would pay whatever you charge for it! We love you keep up the good work, and give us one solid cookbook.

I did that with 2 of them but one of them Downloaded so that the pages don't have all the information on them and I don't know how to fix it. I keep forgetting To ask someone for help lol.

You are such a joy to watch! p.s. I run an organic market and have a lot of experience with dried beans. If yours are staying “hard” after cooking it is likely that they are just older stock. Once cooked you can’t really do much to soften them. However, if you have older storage beans you just need to soak them in salted water (1 tsp salt per 1 L water) for 12 hours or overnight then drain and put with fresh water to cook. This should help. When I know I have newer stock I don’t bother with soaking as the Instant Pot does a great job

It depends how old the beans are. I’ve heard older beans can take longer to cook. Maybe soaking this batch before cooking could help as well as giving it an extra 10-15 minutes in the Instant Pot.

You’re already giving us so much Amy. Pace yourself. A cookbook would be awesome - when you’re up for it. One of the things that blows me away every time is your consistency- even when your friends and husband and Abe have vegan “treats” that are not WFPB. I would love help with this. I can be consistent at home, but even if I bring food with me I end up eating vegan junk food if it’s available. I guess I’m asking for more mental tips. Anyway I adore you and your family. You are awesome!

Amy, I have been making my omlettes with moong dahl. I soak a cup overnight, and then in the morning, I blend in the mixer with a splash of water or milk, s&p, black salt, garlic, and onion powder. It's my version of Just Egg...I store it in a jar for the rest of the week. So fast and easy!!! I'm hooked! 😊

@@elsieann2424 I soak them overnight and after blending, that's when i cook them to make an omlette. I often put the entire amount on a sheet pan and cook in the over until just firm. (I add veggies too)...that's my meal prep for a few days 😋

A recipe book would be good. I like sauces on my food so would be good to include if you do a book. I find if you have a good sauce/dressing you can eat more plants. Loving seeing Rommy thriving, she is quite a little personality 😊

I do soak my chickpeas 2 days with a bit of kombu. Drain/refresh soaking water daily. Then cook in instant pot 30 minutes. This last batch was perfect.

I think seasonal recipes would be nice to have, especially for the summer when it's hot and you don't want to cook that much, but still need lovely nutritious meals. ❤

I just love this your KZbin channel. At 70 I also follow a plant based diet allowing me to remain slim, healthy and physically active. As per your chickpea issue, those beans are old. Yes they need to be soaked and pressure cooked to death. Always check the texture add water and put them back in. Hope this works.

For the Vietnamese omelette, you could do it with moong dal. That's what I use to do my "egg replacer" for making oven baked "egg muffins". If you Google homemade just egg, there are loads of recipes (I just skip the oil). 😊

Beans that are old can have that issue. Even if they are new to you, they might have been sitting in a warehouse forever. I would dump them back in the instapot with more water and just try cooking them for an extra 20-30 minutes. Worst case, they get mushy and you make loads of hummus😂

Chickpeas are probably older. Don’t add salt until after cooking, and cook longer. I do 60 minutes in instant pot.
