I always keep a small jar of a nut butter I make myself in the fridge to top my oatmeal with for flavour. My mom always taught me that the human body craves the nutrients we need and that’s when the fruits and vegetables with those nutrients are ripe such as fall and winter we crave oranges and grapefruit etc vitamin C and D with getting less sunshine and greens for iron and that’s when citrus fruit and all our green veggies are ready to harvest. Amazing still to me.

I have a garden, four young children, cook three times a day and am a creative and I don't manage it very well. One thing or another is always falling by the wayside until I pick it up again. I think the idea of keeping things very minimal helps and also the fact that she eats very simply. One can put food in the crock pot in the morning for the hearty lunch and that pretty much cooks itself.

Making all your meals is easy if you don’t want to subject your body to unhealthy foods. This pandemic has opened my eyes to that and the fact that I just had a baby and I don’t want to subject her to processed foods so I cook all her meals and mine and I also have a 14 year old boy that eats everything up, it’s overwhelming and it gives me anxiety, but knowing that we are all eating healthier makes me sleep at night. We’re also vegetarians so it’s easier to make meals now.

I cook like this too. Frozen greens tossed into simmering food is the easiest thing ever. I actually turn my meals upside down: I eat a stew or vegetable dish (often with beans/chickpeas and roasted carrots/small potatoes or rice) in the morning to get a lot of nutrients and energy going in my body when I need it. At mid-morning, I drink an herbal tea with honey--i try to add mint and green tea and hibiscus or chamomile--I often put in two or three different herbs--tastes great and is good for me. Lunch is a large salad with oil and a little bit of dressing: I pile on extras: onions, croutons, nuts/seeds, cracker crumbs, herbs, beets, pickles, tumeric), . I put the oil on first to aid digestion, then just a little bit of dressing for flavor (I don't douse it in dressing--the oil is much better for me); Then mid afternoon is a snack of a piece of fruit and a piece of chocolate (orange with dark chocolate is nice). I do not eat again after 4pm. That is it for the day. If I am still hungry at 3pm, I will have a piece of flatbread with hummus or cucumbers with hummus or a small slice of chocolate brioche with dark chocolate sauce on top and two strawberries sliced on top. That way all is digesting well before I sleep for the night at 8 or 9pm. dts

Really liking your new stepping stones make it even more of a fairyland garden. I don’t know if you’d have space in your kitchen if it’s anything like my little kitchen but you can get an Instant Pot Mini. It’s a pressure cooker so can help preserve all the goodness, but cook quickly and if you swap lids you can set it up as a slow cooker as it has dual function (in fact it’s multifunctional). I use it to batch make quinoa, rice, etc. You can even sauté in there before pressure cooking your meal and as like it all in one pot it would be ideal. I liked your oats with the stewed apple, gonna have to try that. I actually eat Irish oats, Flahavans to be precise. I like the fact it comes in paper packaging and is organic.

"KEEPING THINGS SIMPLE AND NUTRITIOUS." It doesn't get any simpler and more sensible than that. You know, we are the only species on the planet that needs to be told how and what to eat. It can be overwhelming and confusing to navigate what the latest research findings have shown or fad diet is advertising. It's not that complicated. Eat real food, in moderation, mostly plants and listen to your body as it will tell you exactly what it needs. Thanks, Niamh for sharing your sensible approach to eating an as always, life. P.S. I am jealous for this weather. In Greece we are not going to have real autumn until november at least.Enjoy it.♥

So lovely! There were several tips in here I'll be using. I didn't think of freezing my greens and just popping them into a one-pot meal. I love the pesto from carrot tops idea too! Thank you.

Love this time now for cooking...I must get out the slow cooker and get motivated. I really need to loose some weight and this is motivating me to get back into healthy eating, batch cooking, preparing food in advance etc! LOVE porridge so much or over night oats...or even baked oats which are handy snacks or breakfast on the go!

Hello i am fairly new to your video,s. its is just what i need right now.... we are living in a unpridictable world. When i watch your vlog,s i find them very soothing , nurturing and educational. i believe most people can benefit from them i really do. I passed your links on to family and friends and they all love them as i do. When i have a free day. i light candles, put on some very soothing music and stay in my PJs all day. And just chill. And i put my phone away out of sight out of mind. And no tv, especially no news. This really helps me to switch off... Then i can tune in to my inner world that so often gets lost in the hurly burly of life... Thank for sharing your video,s and bless you untill next time bye x

I missed this last year! Your oatmeal and stewed apples gave me a great idea how to use some fruit spreads I've gotten. A variation from the honey I usually use to sweeten my porridge. Thanks! I'm not vegetarian, but I find myself varying the veg in my soups to provide different tastes. Bell peppers (any color or all of them) provide a kick whether as a soup/stew ingredient or as an edible bowl for pilafs, gratins, or something more substantial that one bakes in an oven.

I eagerly wait for your video from saturday onwards. Here in India its 4.30 p.m of sunday when you upload your video. As always very calming and cozy video. One thing i want to say is here in India we use pressure cooker to boil beans, lentils because it is cooked fast in pressure cooker than in a pan. And you can use/add tumeric powder, chilli powder in red beans curry to make it tasty and healthy. Thanks for the wonderful video and calming voice. ❤🌹❤

Thank you for the consistent informative videos. I love your Jasmine! Here in the southern hemisphere, we are going into Spring and the Jasmine is just starting to flower. We had an unusually very cold winter and are eager for sunny days. Sending ❤️

Hello from Arizona! 🌵 Although we are a warmer climate all year round I do find that the moment it feels even the slightest bit chilly, I get busy making soups and slow cooked meals. More root vegetables for sure. Hot teas and oatmeal too ☺️ Anyway I am new to your channel and find your videos so calming and inspiring. Thank you 🙏 ☺️

I enjoyed this video. My diet change in fall is not to big. I like to make soups and stews in fall and winter. I enjoy teas more to.I will remember to grate my veggies for faster cooking that is a great idea. I also learned a bit about lintels that I did not know.I only had once but they are tasty.

Thanks for your videos, I like their color, words, rhythm. Tip for porridge in the morning - to grate the apple straight into the porridge while cooking the flakes, it will cook well and it will taste nice (and save one casserole ;).
