Thanksgiving was weird this year. I've been quarantined with my family and we've been cheffing it up so the holiday lost some of it's usual novelty 😂 My mom went ham and made a giant pan of lasagna a week and a half before Thanksgiving so our lactose intolerant selves all agreed that we didn't even need mac n cheese. That's unheard of in these parts lol. We didn't even do turkey. We had cornish hens and a lot of veggie sides like parmesan and mustard crusted cauliflower, collard greens, and sweet potatoes. Your beef, pilau and sukumawiki looked so good!

Stove Top Oatmeal Tips: 1. Follow the directions but put about 1/4 cup more liquid in. Put the oats, water, salt, in a pot, give it a swish, cover it, and put on medium ( no higher than 5) for 10-14 minutes . It will be creamy and cooked through with out stirring 2. Replace half the liquid with full fat coconut milk. Add raisins, cinnamon, nuts, and maple syrup. *chef kiss noises*

I'm in the UK so my Christmas pudding is made: this is a torturous experience where you make the mixture, in my case almost forget to add flour, leave it overnight, then boil it for 8 hours, so you have to remember to top up the pan with water, or it boils dry and your basin melts. Which didn't happen to me this year so I guess I win? Then we have to cook it for 2 hours on Christmas Day and set fire to it before we figure out if its edible. At which point my kids will hate it anyway even if it has turned out good! Christmas just wouldn't be Christmas without it.

you have to boil the oats with water first because oats absorb water better. Bring the water to a boil add oats and a little salt , then stir and let cook ,after oats are cooked you add your seasonings and stir it in and let the seasonings seep in (only for 1-2 mins). A lot of people use milk I recommend using a yogurt ( I use so so delicious unsweetened coconut yogurt but you can use the yogurt of your choice), this allows the oatmeal to stay creamy or you ca add an unripe banana to the oats.
