I use epicurean boards which are made of paper composite. I like them cause they're incredibly sturdy, don't warp, easy to clean cause they're pretty thin.

Almost certain they are epicurean, available at Sur La table, Whole Foods, Amazon. I like the natural shades like the ones she has but I do not like the black ones. Every so often it leaves black bits from the board on your food
