I love these videos!! So much inspiration! I've been cooking all day and I made a sweet potato and butternut squash soup with cinnamon nutmeg and an apple.... 🤤🤤🤤 It is SO good!! While visiting Florida last winter I became obsessed with the rule breakers cookies (from the 4 pack to the 8, skipped the 12, got the 24). They have such a specific taste & feel - i had one to three every day for weeks until I got over needing them every day (I did that with Justin's cups for weeks, too - I think I get a favourite food, constantly want it, have it, & then I'll go to not having any to having it every so often, like I'm no longer under a spell). With rule breakers, not eaten on the go, I'd most often spread nutiva on the chocolate, sometimes Justin's hazelnut almond butter; vegan plain frosting on the birthday cookies; and for some reason I'd leave the chocolate chip alone. I never knew there was peanut butter. It's okay because I sometimes put peanut butter on the chocolate ones when I finished the nutiva. The burrito looks delicious. I so appreciate how you teach the components of making food taste good - I keep your salad recommendations in mind whenever making one. I love how you so enjoy Molly Baz & Bon Appétit. (My cousin who can't & won't cook has years & years of Bon Appétit magazines - I like savoury food over sweet but om one visit I kept staring at their La Bête Noire & also their Brown Butter and Peanut Brittle Ice Cream, which might have been from a restaurant, wishing I could make them, with my cousin wishing I'd stop staring at the food & read one of the five fashion magazines she'd bring home each week or that I'd go outside...but the dacades of food magazines mesmerized me - so I'd sometimes read them in the backyard, a compromise). One day I'll figure out how to veganize things from there, but right now I'm grateful you do.

Lovely video and recipes. I would definitely try the Pumpkin and Veggie curry and would actually buy a Pumpkin to use for the curry because I don't think Pumpkin puree or prechopped Pumpkin is actually available in the UK. Next year I would like to grow it in my allotment/garden.

NikkiVegan that chickpea burrito sounds delish! Besides breakfast burritos (tofu scramble with veggies and vegan breakfast sausage), I like to do sandwich wraps too. I used your dressing on salads and did a “honey mustard chick’n wrap” with lettuce and a Boca chick’n burger. I also love a classic tuna/chickpea salad wrap with the works, or roasted veggies, vegan motz, and balsamic glaze! I feel like the possibilities are endless and there are so many delicious ideas for wraps and burritos!

Hi Nikki I just tried the breakfast burrito and it was AMAZING!!! I used vegan mayo as a substitute for the cashew dip and I used the pickled red onions instead of pickles, Sriracha for the hot sauce...GAMECHANGER! Wish I made 2 :)

Hey Nellie 😊 you can make your own blend of pumpkin spice seasoning by mixing together cinnamon, nutmeg, ground ginger...sometimes that's it and sometimes there's also a pinch of cloves. I googled the measurements and there are lots of easy recipes with the ratios you'll need. Hope you find it helpful! We had run out of hubbys fave salad dressing so i took the almost empty jar of olive tapenade thats been in the fridge forever, added couple tbspoons garlic hummus & a wee bit of hot water from the kettle. Put the lid back on the tapenade jar & shook the ship out of it! Poured it over hubbys mixed greens with crispy mushrooms & (although it looked godawful in the jar lol) hubby said it was DELICIOUS & way better than his store-bought regular salad dressing!

Lol I would be hungry too after that 1st plate of pasta, I usually need to add a couple cups of legumes such as chickpeas, beans lentils with starch like pasta or rice to really fill me up for dinner, otherwise I’ll just have some Creamy oatmeal in an hour or two -to fill me up till the next day.

Hey 😊 I find they last a lot longer than a week when sealed properly but it's probably best to do what's on the label. If you freeze it it should still taste fine just might be a little drier. I've used frozen cheeses in sauces and it ends up being fine!

Thank you! It kinda depends on the day. If I'm having a bad day like I'm busy and stressed I might eat more random foods...like whatever's fast and easy...doesn't really go together but it's food and I can't be bothered to make anything else so that's what I eat. Other times I'll be kinda blue so I might treat myself to some of my favorite meals with lots of snacks like the other day I made nachos and had some ice cream while watching a funny movie. Or I'll order food or make a frozen pizza or just have toast for dinner with lots of peanut butter and banana slices because that always feels cozy to me. I eat differently every day, so these videos are just a peek at one day of meals not a model for how I always eat or a suggestion that anyone should eat thee exact same way as me 😊 What do you eat on bad day?

I had to think about that one for a while, haha. We don’t really have so many vegans brands. Most things are accidentally vegan. I do love Veganz, which is a German vegan supermarket that also has their cookies and chocolates in some Dutch supermarkets. At this time of year I do eat kruidnoten and speculaas, some version of gingerbread cookies that we eat in the fall and which are mostly vegan friendly 💛

Hi Nicole! I'd love to try the Rule Breaker cookies--do you trust the site that's selling them (Healthy Finds)? I just bought them off the Healthy Finds website, haven't received a confirmation email or anything... They seem kind of sketchy. Hoping I didn't just make a dumb mistake falling for a scam, so I was just wondering if you know they're a legit company... Thanks!

@@NikkiVegan I have no seen it here in Atlanta. I've tried the artichoke burgers from that brand--they are delicious, but no pmfu yet and to order from their website is $50 for 8 packs and I don't want that type of commitment yet..lol
