It’s officially summer, and I am so excited for the long sunny days and yummy food! I recently saw a post saying on average, we only have 75 summers in our lives. So this summer, I had one goal, and that goal was to just be happy. So here is a realistic week in my life, making the most out of every day and every meal.

I love your pesto recipe and your love of experimentation in the kitchen :) I'll share my very inauthentic but very iron-rich recipe if you're craving greens (even as a Sicilian, I do what I want!!): blend 2 c fresh spinach, 2 tbsp jarred pesto, 1.5 tbsp EVOO, 1 clove of garlic, 1 tsp-ish black pepper, 2 tbsp plain hummus (trust me!). if it's too thick, add 1-2 tsp water. add to cooked pasta w 1/4 cup pasta water, stir for a good 3 min with residual heat from cooked pasta, and serve :)
