I upvoted because of your dog 🐕 ❤. This is going to be a long one. We share A LOT IN COMMON - you and I - including our name. I was a vegeterian for over a decade because I love animals. Then, pescetarian for many more. After moving away from city madness a couple of years ago, buying a farm and abandoning the medical profession, I learned that there is a different relationship between people and farm animals than among people who live in cities. Farmers & ranchers love their animals, care for them everyday and they live a truly good life. Until, well, there's no other way to put it - is time to eat them, and they are harvested humanely. Right now there are a lot of calves following their mamas around here. It's overwhelmingly beautiful and I have such gratitude to be able to witness it. I don't kid myself that, after a year or so, those calves will be fully grown and will become food. That's the circle of life. It would be a lot more cruel to let them age, and become old, unable to move or ill, and then have to euthanize them. As for vegans and vegeterians, unfortunately, they will never get HIGH QUALITY proteins that are bioavailable to achieve optimal health. They do not exist in plant world for humans; other animals are a different atory. A cow eats plants almost all waking hours in order to grow after it stops consuming mother's milk. We still eat A LOT of vegetables but we get high quality, highly bioavailable protein from fully grass fed beef and fresh farm eggs. And we thank God everyday for these beautiful gifts. Finally, there is growing evidence that there is some kind of consciousness in plants: they communicate with each other when close, and even long distance via mycelial networks encompassing whole forests and regenerative farms. When a tree or plant is in distress, it sends signals that are picked up by other healthy plants and which then are able to send nutrients to the distressed one via underground root networks. So, just because it's not the consciousness like ours, doesn't mean it's particularly lesser or less important. ❤

Thanks for sharing your “What I eat in a day”. Your food always looks so good. I need to make that bread again. I have a good relationship with food now. I finally realized that all food fits in to a healthy lifestyle. I eat mostly whole foods but do have a treat when I want it. Doing this has allowed me to enjoy a treat without bingeing.

I appreciate your approach as I am also vegan! I see alot of fitness influencers getting into diet culture specially like keto. Or macros and counting calories. I believe it's smarter to eat organic and stay away from processed foods. I am shocked that so many health coaches do not talk about how dangerous our food supply is with all the pesticides and hormones. Focusing on vegetables and nutrition and vegan, is the least we can do and is the easiest approach in my opinion and we also save money by NOT purchasing packaged products with all the chemicals " ingredients" .

Wonderful video Claudia! I love fruit and veggies not much of a meat eater but love pasta. One would never know that you struggled with food at one time. You are such a lover of natural products. I wonder if your husband eats the way you do? You look wonderful Claudia, I admire you. Take care.

When out and about he eats a bit more chunk food then I would like him too ;) Glad to hear you love fruits and veggies as well. What is your favorite pasta dish? I have been making a delicious Thai noodle salad lately. I use rice noodles and pack it full of vegetables. xx

thank you for sharing, claudia! i had no idea you had a history of disordered eating, and on your last video about food, i made a comment on how i thought it felt very obsessive and unhealthy, and hoped you were ok! perhaps i was picking up on the valence of that energy you were and maybe still are healing--for healing is a lifelong journey! cheers to you, and congratulations for pulling yourself out of the depths of where you were. the world is better with your light, and you are an inspiration to us all. i am one of the very lucky ones who has a healthy relationship with food due to my mother's vigilance and close attention to breaking the pattern of disordered eating--she is still on her healing journey. i eat everything and love every second of it, but stop when i'm full--even if there's only one bite left. i think a secret i will share here is: ENJOY your food. in-joy. put in joy--your cells will feel it. doesn't matter if it's decadent chocolate cake or cacao in water, guilt is never part of true joy.

I had difficulties with food in my 20’s and it’s such a relief to turn it around and see food as nourishment rather than abusing it . I NEED to make that bread !! Thank you for sharing this, Claudia. I had a similar childhood and never had a proper relationship with food. I eat when I am angry with someone, and it's almost like a punishment to myself as I am doing it. I work out with weights, walks, and yoga and eat all the healthy things but always manage to sabotage myself so I never reach my goal. I would love to try your bread. It looks delicious! Take care. ❤

It can be so incredibly challenging, when we grow up the way we did, to have a healthy relationship with food. But I think you’ve done an amazing job, and you need to give yourself credit for it. No one is perfect, like I said, I still have that compulsive mind that likes to interfere times. Hello my lovely friend 👋👋👋 This made me smile because, I had the same t-shirt on (at the beginning) and my hair in plaits 😂 - sisters! LOVED these food recipes and we eat very similar (although I cannot have coconut) but have the sojade yoghurts (as very clean)… I’m going to try your recipe and I also do a gorgeous buckwheat bread recipe… 1 ¾ cup buckwheat groats 300 grams 2 tablespoons psyllium husks* 16 grams 2 tablespoons chia seeds 26 grams 1 cup water 230 ml 3 tablespoons olive oil 45 ml 2 teaspoons baking powder ½ teaspoon sea salt Seeds for topping optional Instructions Soak the buckwheat in enough water to cover, for at least two hours but not over 8. You just want them to be soft enough to crush with your fingertips. Once they have soaked, rinse well. The buckwheat will be kind of slimy so rinse very well and let drain. Meanwhile, combine the psyllium and chia with the water, stirring to combine. Let sit for about 10 minutes until thick. In a food processor or high-speed blender, add the soaked buckwheat, psyllium gel, oil, baking powder, and salt. Puree until the mixture is sticky and most of the grains have been pureed to a mush. If you are using a blender, you may need to remove it from the base and stir it a couple of times. Scoop the mixture into a parchment-lined loaf pan. Flattening the top with the back of the spoon to make sure it's evenly spread out. Top with seeds if desired. Bake at 160°C (320°F) for 90 minutes. Let the loaf sit for a few mins before removing from the tin. Let cool on a wire rack. Wait until the loaf is entirely cool before slicing. The loaf can be wrapped and stored in the refrigerator for up to a week, or sliced and frozen (I freeze in slices)… I also tried putting 2 tablespoons apple purée and 1 oil (instead of 3) and loved that too… I love making a tomato and roasted red pepper soup and toast my bread to dip in and have a bit of crisp to it! THANKYOU once again for such a fabulous video - greatly appreciated.. You look amazing as always and very very healthy 🎉🎉🎉 Ps… finally getting my hormones all tested so hopefully should know more in the next few weeks ❤❤❤

Hi Claudia, I know I am late to this party, but I just wanted to say how I love your What I Eat videos! Very inspiring. Also, thank you for the bread recipe, I was looking for it! About food, I had a bit of a mindset of restriction when I was younger. Some time ago, I read Brendan Brazier's book Thrive and my definition of food changed (ie: much of what most people eat to me is not food), that's when I started being whole food plant based. Thank you for all the great videos!

@@claudiaglows I live in California; the land of fruits and nuts! Grew up surrounded by almond and walnut orchards, as well as, vineyards. I eat at least half of a Hass avocado per day. Just love the avo chunks on my salad along with strawberries or blackberries. Balsamic vinaigrette and ground flax seeds enhance my salad. Healthy food is very satisfying so I must try your recipe soon. Thanks for sharing.

You and I have had very similar struggles, and I’m so proud of you for how beautiful you have overcome them I agree with you, most gluten-free bread found in stores is full of a whole bunch of stuff. You really don’t want. I’m lucky I can get some fresh baked gluten-free bread here at the health food store. But it’s still not as good or healthy as my homemade one. I've struggled with my weight for most of my life. Constantly yo-yoing. It was until just recently, last 3 years, where it changed. Hi beautiful, You glowing… i enjoyed your healthy day. Oh coconut yoghurt so good i finally found, here in US great coconut yoghurt, only few ingredients. I love with berries and some days love to add coconut whip cream its not so bad either. Its like a meal and dessert in one. It replaced my original meal- fresh made almond milk with berries and muslii . Its just easier. You know my life is too hectic,but very soon, well next year, its going to be my year. My hubby can have his staff to take care of him, and i will be able, finally , after 14 years, to take care of me, and return, to the things that i love love… ballet, and kitchen . I love to create things. Its my passion. I do need some fermented veggies. And make my own bread. I used to make similar to yours. But i also love raw vegan onion bread , made in dehydrator. You know i had raw vegan desserts business, i used to make all kind of stuff. But that bread , you probably tasted, since you lived in California, where raw vegan foods have been av much longer, than here, in SF. Its so good… but i am jealous, you in Europe, can get so much better quality veggies, fruits, overall so much everything is better there . Cant wait to go there. Thank you Claudia (need to try that bread!!!). I knew the anorexia part....not the childhood part, I would have never thought, however, having been anorexic myself, I know what those other end cravings can be like. The only reason why I never went to teh other extreme is that could never have accepted being chubby. Otherwise I probably would have! For me, it started by just trying to eat only healthy things (around 16 too) which quickly came also about counting calories.... and that's almost always the beginning of the end....Thank god after 3 months in hospital age 27, I sort of kept a decent weight But I really stopped counting calories with the birth of my first child. Now I am just focusing on eating healthy and exercice regularily but I "cannot" eat unhealthy foods (having a a full pack of potato chips and then ice cream). It would just make me feel very insecure. I still watch my weight but it is in a healthy range.

Thanks for sharing your story ❤ I have, too, struggled with anorexia and later on bulimia. The ED has spanned my teens and early twenties and while I am much better now at 26, I still have a long way to go. I can’t even imagine being in the depths of it for 20 years well into adulthood/middle age. I’m so so so happy for you that you managed to find some peace with your body. The longer it goes on, the harder it gets to overcome it. This shows how strong your are. If you don’t mind me asking, do you feel that the years of unhealthy eating and starvation have taken an irreversible toll on your body in terms of health/appearance? You look amazing by the way, hope it doesn’t come off the wrong way ✌️ ❤

Hi Sophie, thank you for sharing a bit about your struggles with food and ED. It is such a hard struggle to overcome, but you have come a long way already and being aware and honest about it is the biggest step to full recovery. Yes, I do think it affected me. It messed up my whole endocrine system and I have been on hormone replacement basically my whole life. First on the pill, which I was on partially to keep my bones from being brittle, and then on HRT since I was 38 and even thyroid meds. As far a appearance, that is hard to say, as I also got a ton of sun and over exercised, which of course all took a tool on my skin. Some of it is reversible, but only to an extent. I was anorexic, we had good meals. But food was about control, it was the only thing in a chaotic childhood that I could control. I have been vegetarian for 33 years, have hashimotos and pernicious aneamia, so I have B12 injections, i do my own now and it makes me feel more in controlof my life. Have autoimmune issues, run in my family. I do eat mostly plant based,the idea of eating senient beings just makes me feel ill. The same poeple who say meat is necessary would never eat cat or dog, i find that hypocritical, an animal is an animal, a sentient being that just tries to enjoy its life to. Love you meal ideas.

Hi Barbara, I am sorry to hear that struggled with anorexia as well. I agree with you and the thought of some people actually eating dogs and me finding it disgusting, is what was one of the reasons I became vegan. It is hypocritical, you are right.

Thank you Estella. I actually recently made a video on my experience with sculptra and the newer generation lanluma. Lanluma worked much better for me than sculptra. I’ve watched a few of your videos, especially the Sculptra one. I’m actually amazed at how natural and full of volume your face looks, especially considering you’re in your 50s! I think if you got microneedling on your neck, around your lips and eyes. You would actually look like you’re in your twenties! Which would actually be insane, to be in your 50s but look like a twenty year old… you would fool everyone and have twenty year old men chasing you!

Hi Meghan, I am happy to hear you are vegan as well! And I hope you will love the bread As far as the granola, it really is not a recipe. I just use oats, enough almond butter to coat them, a bit of salt and maple syrup and then nuts and coconut flakes. I bake everything without the nuts and coconut for about 10 min, give it a good mix, add the nuts and coconut and bake for another 10 min or so xx

Hi, Claudia. I have made your bread many times and I love it!The older recipe said to bake on 392F( 200 C) and always I did so for 1h and 10 min in the oven. In your new version it says 360F. Which temperature I should follow?❤Br. Daiva

Wow - your story is nearly identical to mine! I am also 54! I, too, went from overeating junk food as a child, for the same reason you describe, to developing anorexia at age 12, which evolved into bulimia at age 18 with the use of laxatives to purge after binging. I tried to make myself vomit but was unsuccessful, so the binging and purging with laxatives became a regular thing. I hated myself and wanted to die. I told myself, when I was in the bathroom feeling so sick I could barely function, that it would be the last time, but it wasn't the last time. In fact, I did not stop that cycle until I became pregnant with my son at the age of 24. I truly believe getting pregnant saved my life. However, my relationship with food remained disordered for years. Calories and workouts consumed my mind. Thankfully, I am doing much better nowadays, but I do continue to weigh myself daily, not wanting to gain weight but not wanting to lose weight either. I was vegan for a while but my skin and hair began to suffer, so I added Greek yogurt, pasture-raised eggs, cottage cheese, and wild-caught salmon back into my diet alongside plenty of plants. I avoid all ultra-processed and added sugar. In fact, I make a baked oatmeal concoction that is very similar to the bread you make in this video. I add several types of nuts and seeds to it along with beans and unsweetened dried cranberries. I bake it and divide it into 6 servings. When I am ready to eat a piece, I heat it and top it with a spoonful of peanut butter and also yogurt. It is delicious. I subscribed to your channel not that long ago because you reminded me of myself, and after watching this video, I am blown away by just how similar we are. ❤

I was attached to a number on the scale for many years after “recovering” as well. I think at times our brain just needs to hold in to a bit of control, especially after having given up so much if it already. Eventually I got rid of my scale, which was quite liberating. Hi Kristy I don’t really follow an exact recipe. I just make some oats and pumpkin seeds with a bit of almond butter, sea salt, and a tiny bit of maple syrup. Then I baked that in the oven for about 10 minutes, take it out mix it up and add some pecan nuts and coconut flakes, and bake it for another 10 minutes or until crispy. x

Claudia, my question is unrelated to this video but wanted to ask: I saw the video where you had Lanluma. It is not available here in the US and wanted to ask you how much improvement you got from Sculptra and if so, how many sessions and syringes in each cheek? Also, did you have any problems w/ it? Hi, unfortunately I got very little improvement from sculptra. If you watch the videos I did on it, I show before and after pictures. I had 7 vials and the only thing I noticed was a thickening of my skin, but my cheeks were still very sunken in. However, many have great results with sculptra, so it is def. worth a try. x

I had Lanluma injections, which is a newer generation bio stimulator, very similar to sculptra, but in my opinion better. As far as tretinoin or MB. You can use both if you want to. But if you want to just use one, I would def. go for tretinoin. It has the most research behind it and we know it works x

Hi, thank you so much for your very kind comment. That is interesting, that your weight increases, and at the same time your face gets thinner. I honestly don’t have a Lotta suggestions, aside from making sure you get enough healthy fats in protein in your diet, to hopefully keep that volume in your face. But, facial volume loss is something that we will all experience with age.

I am not trying to be offensive in any way. I like your channel and can tell you're a good person, that being said, I knew you were vegan when I first saw you. That's not a good thing. We are not meant to eat plants. Our digestive system is specifically designed to digest meat. I'm sorry, I know it's hard for people to accept that but it's true. Plants are not bioavailable to us. We can survive but health issues will come eventually.

You are not being offensive and I appreciate your kind words. You def. have a right to your opinion, but we have to agree to disagree. I think in this day and age, we no longer are depended on meat to nourish and sustain us. That being said, I made the decision to go vegan not for health reasons, but because of my love for animals. But I do feel that done correctly, a vegan or plant based diet can be very healthy and there are plenty of long term vegans who are thriving xx

@@claudiaglows I agree..... While I tried to be vegan for 6 months (I like cheese and eggs so much) I did not suceed. I agree that you can be a vegan and be heatlhy but it takes a lot of discipline (really include lots of healthy proteins etc). I chose to be a vegatarian and use organic eggs and stuff whenever I can. Even then it is hard for me to get enough protein. But with a bit more trials (and errors) I will get to the perfect diet. It is for the love of animals and for the planet. That being said, I respect meat eaters.... but if everyone could be a bit more conscious about choosing quality over quantity, and eating meat less often, it woudl make a positive impact on the planet and result to less animal suffering.
