I have been watching your videos since 2017 and it's so crazy to think it's been that long lol I'm not even vegan but your videos are really aesthetically pleasing to watch and we have a lot in common I always watch your videos while doing random tasks like doing the dishes or cleaning my room it's like facetiming a friend i rly wish i got to see you when you came to nyc but maybe next time. Also here is a south asian recipe that you might want to try it is unintentionally vegan so I thought you might want to try it when you make another world food type of video The recipe is for a lentil soup curry type of thing you can eat with rice or bread Ingredients: 300 grams of Red Lentils (Also called masoor dal), 1 whole garlic, 1 tbp salt, 1 tbp red chili powder, 1 tbp garam masala, 2 tsp black pepper, 1 tsp turmeric powder, half cup of olive oil or vegan butter (make sure to use a fat with a strong flavor because the original recipe is made with ghee and it is a major component of the flavor but it's not vegan), 1 green chili sliced, 1L water Instructions: Soak the lentils in water for at least an hour to decrease the cooking time. After an hour, add 1 liter of water to a pot with the lentils, all the spices, and all of the whole peeled garlic cloves (keep 2-3 cloves for later) and cook on high heat until the water comes to a boil. Let it boil until lentils change their color to yellow and the curry becomes thicker. Keep boiling until the consistency is of a thick soup and there is little water left in the pot. Once the consistency is right, taste it to adjust the spices. In a sauce pan, heat up the oil or vegan butter. Cut the remaining garlic cloves into slices and fry them in the oil until they become golden brown. This is called a tarka. Add the oil and the fried garlic to the lentils and cook for about 5 minutes. Add more water if it is too thick or let it cook for longer if it is too thin. Slice the green chili into slices and add it to the curry. You can eat this with rice, naan, or any kind of bread, or even just on it's own.

kind of like checking if avocados are ripe, you lightly press them with your finger, if there's an imprint it should be ripe!
