INGREDIENTS + NOTES
The measurements are all a bit more eye-balled than usual, since this is a vlog style recipe video! :)
#1 Current Favorite Oatmeal
½ cup oats (50g)
1 cup water (240g)
generous pinch of salt
about ⅓ cup frozen blueberries (50g)
1-2 tbsp chocolate chips
a drizzle of tahini
#2 Potato Thyme & Ginger Soup
2 small onions
1 inch piece ginger
1 tbsp olive oil for the pan
1 handful potatoes
1 can white beans (400g = 14oz)
1-2 little thyme twigs
1 splash balsamic vinegar
1 heaping tbsp store bought hummus
1 vegetable broth cube
2-3 cups water, more as needed (500ml - 750ml)
salt, pepper to taste
#3 Quick Cucumber Toast
2 big slices sourdough bread
1 tbsp balsamic vinegar
1 tsp soy sauce
1 tsp maple syrup
1 tsp roasted sesame seeds
pinch of salt
1 tsp sesame oil
½ medium cucumber
preferred spread for the bread
#4 Wednesday’s Smoothie
2 frozen bananas
2 tbsp unsweetened cocoa
1-2 tbsp nut butter (I recommend almond)
a few drops vanilla or caramel aroma
1 small cooked beet (honestly skip the beet haha it wasn’t that good)
½ cup - ¾ cup almond milk (120-180ml)
1 tsp maple syrup
granola, sesame seeds for the top
#5 Raspberry Milk Iced Matcha
1 tsp matcha powder + ¼ cup hot water (60ml)
¼ cup (60ml) cold water
ice
⅓ cup frozen raspberries (50g) - or more to taste
½ cup - ⅔ cup oat milk (125ml - 160ml)
1-2 tsp agave syrup, or to taste
a few drops vanilla aroma or ½ tsp vanilla extract
#6 Teriyaki Inspired Bak Choi
2 bak choi
a little oil for the pan
1/4 cup (60ml) water
for the sauce:
1 tbsp soy sauce
1 tbsp balsamic vinegar
½ tbsp agave syrup
1 tsp sriracha
¼ cup (60ml) water
1 tsp cornstarch
→ served with 1 serving rice paper tteok (or actual rice) and tofu/faux meat
#7 Single Serving Banana Oat Pancake
½ cup oats (50g)
2 tsp corn starch
¾ tsp baking powder
¼ tsp salt
½ tsp cinnamon
½ banana
⅓ cup (80ml) non dairy milk
1 tsp lemon juice or apple cider vinegar
1 tbsp vegan butter for pan
vg yogurt, the other banana half and some walnuts for serving
Note: Use a SMALL blender, similar to the one I am using in the video,
a large blender will have a hard time blending such small contents.
If you only have a big on, double or triple the amount of ingredients!
#8 Bak Choi & Vegan Meat Noodles
2 Bak Choi, cut into quarters
a little oil for the pan
1/4 cup (60ml) water for steaming/boiling
for the sauce:
3 tbsp soy sauce
2 1/2 tbsp balsamic vinegar
1 1/4 tbsp agave syrup
2 tsp sriracha
1/2 cup (120ml) water, more if needed
1 tbsp cornstarch
150-300g vegan ground "meat", panfried
2 servings of noodles of choice
for serving: sesame seeds, spring onion, cilantro etc

this is so nice. youtube's algorithm recced me one of your food video yesterday and I ended up subscribing. I love the food idea you give, so simple and filling, and which doesn't need expert tools or half an hour of preparation & 24 ingredients :D I don't particularly like cooking, so easy and filling is my go too, particularly if I can make it in batch to take lunch to work. We should all aspire to have pics of cinnamon rolls on our walls 😊 I can't believe I've never tired putting a combo of frozen blueberries and chocolate chips in my oats before (genius), I'm kinda excited to see what some tahini does to the mixture now too. Hi, thank you for sharing. I have a little question about where your friend found those protein bars (9:23) because I can not find them in my country and not on internet. I am bit scared sometimes when I see the amount of oil used... for example the toast with cucumber, do you have maybe recipe with less oil ? (I have a illness who can not get many fat a day and oil is enemy (as is butter (allergy), and sugar hahaha) Also : spinach, when buying at the supermarket it is always so big packs... And they become bad before I can use it all. I add handfull here and there in meal but I can not eat whole bag of it because I do not like the taste of it hhahahahaha. Do you ave maybe a secret to get them fresh longer ? (like salad, divide the leaves and put them in kitchen tissue) And wtf but vegan chocobons O_O !!!??? I need to find this too so my father stop eating dairy one who make him always sick xD When seeying your meal, i want pakchoi... mhhh... with pili pili (piment d'oiseau).... But so hard to find and to cook without it being rubber like xD

These meals would be amazing if you had an appropriate amount of protein each day. Only in 4 meals you included sources of protein. 4 meals out of 21 meals (3 meals x 7 days) is not adequate. Some more tofu, some seitan, tempeh, TVP, nutritional yeast and benas would go a long way.

Hey Mina not hate but Help* with ur health... This is the first time I'm coming across you as your video was advertised to me from Google but I'm happy you shared with us mental health status and the pain you're experiencing due to being a lady but I was sad to see that every day of your video you were also showing us things that could be contributing to ur unwellness, I would like to be straightforward in telling you what those things are without putting many suggestive words to make this an even longer comment than it already is. First of all as a woman it's best that we avoid SOY at all cost as it causes discomfort & possible growths (tumors, cysts or fibroids) in our reproductive system& Hormonal imbalances therefore soya sauce, tofu and the yogurt you mentioned n vegetable(soyabean) oil that u didn't. Secondly it sounds like your body may not have had a cleanse(detox) since you became vegan hence this is important because if your past lifestyle or the things you're eating now is clogging your system you can't absorb proper vitamins and minerals that your body needs to take care of and heal itself. Saying that to say you might want to look into the circadian rhythm of life or fasting and even a herbal detox so your body can function better and your gut health could be realigned. Many of the Masters in our present vegan movement will say that a lot of people are vegan eating the same bad foods as they did before and have the same health problems as they would experience on a standard American diet because the more things we cook and process leads to the same health issues. Example the pastas, the fake meats, processed peanut butter, table salt instead of healthy salts like sea salt or Himalayan salt, oats vs healthy options like rye flakes or chia porridge/ pudding, teabags vs the fresh herbs used to season ur food and last but not least the disregard for how important fruits and herbs in our diet(Live'it) are then the constant use of cooked vegetables this is because fruits and herbs serve as the purifiers that cleanse our bodies when the vegetables are the rebuilders and the things that help us gain weight and build muscles. So if you ever feel you're having trouble losing weight or retaining weight while being vegan it's maybe cuz you're not allowing your body to eliminate properly like first thing in the morning should always be fresh seeded fruit and spring water so your body could eliminate which means pass out waste between 4:00 a.m and 12:00 p.m everyday. I didn't hear you mention water not once in this video besides to cook and it's very important that fruits are always eaten by themselves, one kind/ type at a time, on empty stomach versus in between meals as a snack for optimal health n nutrient absorption... My love our health is all about or gut health because our digestive system is our second brain which effects every other organ in the body n our first brain n it's mental health. Most cooked foods rot's in our intestines while raw foods(fruits & vegetables) fermented which is the goal to better gut health ❤

Are you a doctor? And do you know soy is not bad for your, it's just a false argument used by meat industry to demonize vegetarian/vegan diets. Plus her weight is none of your business and she never claimed wanting to change it. And also detoxes are a myth.

It would maybe add value to your channel to put a little effort in recipes, cooking tools, presentation..? i found myself unsubscribing because i found the lack of effort irritating with 600k followers. Not saying it should be all incredible but i don't find the recipes look inspiring/ tasty... Not willing to be mean, just my opinion :)
