What you're doing here is what in game engines is known as a procedural sky, where you can define colors of the zenith, horizon etc and have a smooth gradient between them. There's also physically based sky shaders that use the sun direction to simulate atmosphere's colors and gradients to create an accurate look of anything between sunset and noon.

I love your technique for creating skies! It reminds me of something I tried years ago with the black material and black fog to create an intentionally surreal and eerie night map. Fun color theory fact time: daytime shadows are blue because sunlight, when it reaches the surface, is slightly yellow! This is for the same reason that the sky is blue; the atmosphere is scattering a little bit of the blue light, which means the light that does get through all the way is slightly less blue. As a general rule, all shadows are complementary to the color of their light source, although this gets complicated in real life due to factors like the color of the object casting the shadow, the color of the surface the shadow is being cast on, and light bouncing off of nearby surfaces, directly illuminating the shadow. Shadows are positively rich with color! Sadly a lot of this gets lost in digital photography and video, so the best way to study it is with real life observation. Try casting tinted lights on a beach ball in a dark room! You might be surprised by how much there is to see.
