Kingdom Hearts teams sounds really interesting, what if you picked teams as if they were player rivals to each other? I.e. having a "starter" trio (extra challenge if it's the same gen) in each of the triads (Aqua/Terra/Ventus, Roxas/Xion/Axel, Sora/Riku/Kairi)?

Only one I would change is Hercules team. Hydreigon/Houndoom would be more on Hades team, so I'd replace them with either Thundurus (Zues) or Heracross if you wanna keep away from legends (normally based on rhino beetle but mega form is hercules beetle).

You did Hercules so I thought of a team for Meg: Meg would have a Chandelure (blueish flames tying with Hades) This one is a stretch but Gardevoir (a feminine figure who can fight on her own) Gothitelle (same reason as Gardevoir) And finally Pyroar female (various reasons)

If Rapunzel had a Pokémon team I think a mix of Flower based and poison type Pokémon because the Sundrop gives her the power to heal but in the Disney series for Tangled the Moon Stone gives her the ability to use the Hurt Incantation which sucks up energy

Galarian Rapidash really doesn't fit Hercules' personality and preference at all Galarian Rapidash does fit better with Princess Sofia (from Sofia the First) or Boo (once she reaches trainer age)

For Mirabel I would've done Eevee (never to evolve), Toucannon (for the bird in Bruno's room), Continental Pattern Vivillon for the mariposa, and Chatot or Meloetta if Mythicals are allowed. Also Florges would've worked better for Isabella because it's whole vibe is making flowers grow and bloom.

For Mei, the Eevee makes more sense conceptually if you think of how Eevee represents potential. It can become SO MANY things, and those things are determined by its life choices. This isn't unlike how Mei is vying for her own independence and to become the person she wants to be outside of her family's pressure. Think of it like, her family are all Vaporeon and they expect her to evolve into a Vaporeon too. But Mei chooses to be a Flareon instead. This doesn't change her connection to her family cause they all have the same roots, but she wants to be her own person.

Aside from Komala, Sableye would have worked for a reference to Stitch. Alolan Raichu or even Alolan Marowak could be referencing to David, who's also a surfer but also a fire dancer Exploud could be referencing to either Belle or Nani, due to how loud Nani can be and has a temper. Feebas or Finneon could be referencing to Lilo's fish, Pudge. Bellossom or Oricorio Pa'u Style references to her Hula dancing Vanilluxe could be referencing to Slushy, who can control ice and make snow, and due to Vanilluxe's Snow Warning Ability. Yes to more Disney characters, and yes to the Kingdom Hearts teams! In fact, throwing my hat in the ring with a suggested team for egotistical hunter Gaston: Primeape, Sawsbuck, Lobunny, and Mr. Rime. Ordinarily I’d have included a Machoke for Mr. Masculinity-Overload, but I suspect you’d like as little repeating as possible so I’m respecting that since Mirabel already received one. Primeape is a splendid fit anyway, with its rage and punching, but also because as well as ape it has pig-features; Gaston was designed by creators to be a ‘man with the heart of a pig’. Sawsbuck is easy, it’s his need to use antlers in all of his decorating! Lopunny is the kind of trophy he’d collect, a reference to the Bimbettes who fawn over him incessantly, and if you go for it’s mega-evolution it is a normal/fighting type even more his style. And Mr. Rime is a very subtle reference to LeFou, his sidekick and his hype-man, who was briefly hidden in a snowbank while following Gaston’s orders.
