The mario kart bit is a laugh at the farce of the video premise -- it should play identical to normal, as we've seen in Sonic & SEGA All Stars Racing and its sequel, Transformed. Rest of the video misses that Sonic's games are made for him going 60+mph and Mario's are for him doing 18-20mph (assuming Mario's run speed is closer to average adult sprint speed), so that's why they all break humorously, and also why you can't just go "set player speed to be 3x default and call it a day".

Not so fun fact: if you power scale(ew I know) both Mario and Sonic in terms of the game universes and material that supports them i.e. idw comics, it turns out that Mario is somewhat Faster and Sonic is somewhat stronger due to shit that happens in the mid 2000's, aka 06 and Galaxy. Considering Mario has more consistent invincibility and various abilities in multiple power ups and Sonic has numerous fighting abilities to defend and limit Mario thanks to frontiers, the debate now becomes who's more annoying to deal with in battle and experience. So there's that.
