I’m not huge on herbal medicine, but I am intrigued about expanding my cooking repertoire by learning about Chinese herbs and spices and this is definitely educational for me in that regard.

HI @Michael, sorry for late reply. So glad to hear you are interested in expanding your cooking with Chinese herbs. In fact, many Chinese herbs are actually food ingredients in China. Many of them are vegetables, fruits, roots that are food. They are found to have health benefits and incorporate into herbal prescription for health purpose. Lotus seeds, longan fruits, lily bulbs, snow fungus, walnuts, rosebuds and many more are all simply food ingredients to begin with. In Chinese Medicine, we believe food and medicine are from the same source. In modern language, it is like 'food is medicine' . Welcome to my channel and hope you enjoy learning! 😊

Thanks for the video. I'm from Indonesia and starting to love Chinese soup. Btw, I wonder if the Chinese older generations in China who have gout/high cholesterol also have the soup. I mean, do they drink the soup and eat the meat or do they just drink the soup? Every time I watch KZbin videos about Chinese cooking (meat soup, etc) and there are many elders enjoying it, it seems they don't have any issues with gout/high cholesterol.

You stop all kinds of red meats and reduce the other kind of meats like fatty chicken. Reduce salt and salty foods like chips or any processed food. Stop frying and fatty foods. Increase your intake of pulses, vegetables, fruits, and olive oils

Hi @Light Ride, umm... is there a specific type of cuts in your mind? I personal think most cuts can be used in herbal soups. You can use bigger bones, if you want the bone marrow. You can use lean pork meat if you want less fat. In fact, herbal soups use not only meat cuts, we can use other parts too 🤣 Some more traditional recipes use pork tail, even pork heart etc. But I don't introduce or don't talk about it much here as I think some cultures are not very used to them.

Can I boil the herbs without any meat or using vegetable broth? is there any additional benefit if the ba zhen soup is prepared using meat? HI @Amuiiyanti, I can't answer these questions as I don't know you and I don't know why you take Ba Zhen soup for. Ba Zhen soup is not just herbal soup for food, it is actually considered a herbal prescription for specific use. Please check with your Chinese medicine practitioner or the herbal store that recommends this for you. Take care!

Hi @Cindy, yes you can use pressure cooker but just double check the material of the inner layer of pressure cooker (not iron or aluminium) . But usually is fine. 😊

Hi @Ebony, sorry for late reply! I guess it depends on how you like your soup tastes and how you like to eat the fish. If you like your soup to have more fish taste, like a fish stew, then you can add the cod early on but beware that the fish will fall apart. You can use a herb bag or some sort of soup/spice bag and put the fish in. In another case, if you prefer to eat the fish, just put the fish at the last 10-15 mins, so the fish is cooked but not yet fall apart, and you can enjoy the fish with the soup. Hope this helps!

As for the herbs on the plate in this video, they are random herbs I put together to film this video. Hi @Diane, for a vegan option, I would recommend simply omit the meat and only use the Chinese herbs. Most of the Chinese herbs I use in this channel are quite tasty, so without the meat, the soup could turn out quite yummy too. For more flavour, you can add some mushroom, corns, or carrots. If you want some proteins, you can add some black soybeans, we use black soybeans in Chinese Medicine.

Mmm! Looks delicious! I'm in Melbourne and love going to all the Asian stores and often see the dried Chinese broth mixes hanging up in packets. I might buy some packs and try making my own bone broth, especially with some added fresh Chinese mushrooms! I have high cholestoral so will definately skim the fat layer on top...Thanks!! 😁

Hi Leilah, exactly! The herbal dried Chinese broth mixes hanging up in packets is the easiest way to start! Adding fresh Chinese mushroom is a great and yummy idea! And buy lean meat or bones that have less fat. Enjoy 😋

Hi @TheTuna, while boidling is indeed slightly better as this method keeps the flavour (and possibly the ingredients) better, but it is not too easy to do as usually double boiling is only suitable for smaller portion. So, it depends if you are only cooking for yourself or cook for family members.

@Indigo, ummm..... on the more cautious note, it is hard to say as it depends on which herbs and how low the kidney function is. Having said that, a number of Chinese herbs are also categorised as food, such as goji berries, red dates, Chinese yam, lily bulbs and lotus seeds, they are actually food in China or Asia. In China, during lily bulbs season, they stir fry them with vegetables. Same as Chinese yam. While we noticed they have healing effects, in one way or another, they may not be too different from blueberries, yam, other seeds that you eat in the western cuisine. As long as you eat in moderation, just like food, then I think they are ok. Most importantly, monitor the kidney function regularly! Hope the above helps!

For people who want a lower cholesterol version, you can replace the "spare rid" with "Lean Pork", this cut is usually available from butcher in china town .

My husband is Canadian and I lived in Toronto for a few years. Canada has a special place in my heart. By the way, totally understand many people are vegetarian these days. One quick tip for you is, for the broth, just make it like the normal vegetarian broth and then add the Chinese herbs like in this video. But now that you give me this idea that maybe I will see if I can try to 'formulate' a vegetable broth based on Chinese medicine theories instead of just randomly put in any vegetables left in the fridge!

Hi Shirley I am back. I have a problem with my Chinese medicine. I bought a huge of Chinese medicine and I store some outside of fridge. I found some very tiny small insect look like any but they aren't. Do I have to spoile them all? They are not cheap TT poor me. Can I only remove them and cook them? Or dried with sunlight? Fortunately, I check some which are stored in fridge. All of them are alright.thank you for your advice.:)

Hi @Ployangjoe, I am sorry to hear!! It is hard for me to tell without knowing what herbs are they and how bad it is. Best to check with the herbal suppliers/shops you bought them from. Instead of Chinese cooking wine, can I use normal cooking wine??(white wine or red wine?)

Hi @Julianne, if you use white or red wine, the taste might be quite different, as they are two different cuisines. At least for me, I might find it strange or the tastes are not 'matching'. For example, instead of using white or red wine to make pasta that requires wine, instead if I use Chinese cooking wine, the pasta will turn out quite differently. I hope this make senses. Yet, if you often use white or red wine in Chinese cuisine and you like the taste of it, then you can do that. It is up to you 😊

Would this still be as effective if I only used the herbs? I’m Chinese and when my dad makes this (he’s the chef of the house) he uses the herbs and meat but he also uses carrots, lotus, lotus seeds, and sweetcorn. I’m going vegan and I’m wondering if I used my dad’s recipe but without the meat, would it still be as beneficial?

@Yingen, yeah we sometimes do add carrots, lotus or sweetcorn in our soup. Meat is usually considered nourishing in Chinese Medicine. Many people like to add meat as meat gives it another layer of flavour and make the soup tastier. If you are going vegan, without the meat, the herbs are definitely beneficial too! With the extra carrots, lotus etc will make the soup very flavourful too.

I had such a wrong advice from the shop where I bought the herbs for the soup, they said to don't eat the herbs....just using the liquid. I'm confused now

Hi Elisa, no, they are not wrong either. It depends on what kinds of herbs you purchased from them. Usually, we don't normally eat the herbs, especially many of them are not palatable after cooking. So, as a general rule of thumb, they can say don't eat the herbs. Having said that, there are many herbs that are actually food or fruits, such as goji berries, longan fruits, lotus seeds, lily bulbs. I eat these herbs even after cooking. It depends on how long is the cooking process. If it is long, then most flavours are gone. Yet, if you use these herbs to make a simple dessert, they can be still very flavourful after cooking, and yes I eat them. Ingredient such as snow fungus, yes, I eat them for the collagen! 😆 If you are not sure and feel very confused, you don't have to eat them as most nutrients should already be in the soup. I hope my explanation helps and hopefully don't cause more confusion! cheers Shirley

HI @Kimberly, firstly sorry for my late reply. You only cook the meat quickly for about 10 minutes to 'force out' the fresh blood. The meat taste hasn't gone, instead, it makes it taste better as there is not more blood taste and only the 'pure meat taste'! Hope this makes sense.
