The question is: Are there the same limitations for Software (especially Microsoft Software) as in common Terminalserver? In Terminalserver old Office Packages like 2007 are blocked at running, and you would need special Volume licenses. What about VDI in this case? I mean there are several Virtual Windows 10-Desktops, so can I install and run Office packages that are blocked in the traditional Remotedesktop-environment?

Would an example of desktop virtualization be google docs, since you can log out of your google account halfway through writing an essay, then finish it on a completely different laptop?

It's a form of virtualization. I think software virtualization rather then desktop virtualization.

A virtual desktop can be either stateful or stateless - each has it's own benefits and drawbacks, and the experience you need for your users will direct you as to which version to deploy.
