I agree with you Dr. Ekberg on everything you’ve said about the oils but, how about mentioning something about the toxicity of polymer food containers versus glass food containers ? Take, for example, the wonderful organic olive oil packed in those polymer (plastic) containers, which may be free of pesticides, herbicides and maybe genetic modification, but full of synthetic estrogens from the polymer packaging. No food should come in contact with anything ,plastic’ ! Glass and ceramic as much as possible, but definitely no plastics !

Have they evolved enough during the start of the grain-eating era? Around 4-5000 years ago? Well, some of us have. We are the ones that do not have clogged arteries, heart disease, diabetes and more. If you look at the obesity/diabetes ratio in western countries, obviously only about 20% of us humans have evolved to eat SOME grains. One thing that we have NOT evolved to eat, is sugar. We take organic butter and gently heat it to melt and separate it and turn it into ghee to remove the milk proteins. It's a pretty simple process and doesn't change the flavor. We chill it in silicone forms and turn it into sticks. It's great!

How to separate, and how long to heat? It sounds fab!!!
@johnatyoutube Жыл бұрын
@@TruBlu65 You put it in a glass bowl in gently simmering water in a large saucepan - a double boiler. If you get the right size bowl for your pan, it will just perfectly sit in it. You have to keep the water at a very low temperature for this method at just the melting point of the butter, but it's the simplest. Other methods involve filtering. Don't boil the water, be patient, and you'll be fine. Once all the butter melts, wait for it to separate (solids will be on the bottom), then you skim the clarified butter (oil) off the top with a shallow ladle and put it into a large pyrex measuring cup. It takes about 30-60 minutes for the entire process. You'll know when it's ready when you see two distinct layers in the bowl with the oil at the top. After you've ladled off all the oil into the measuring cup, pour it slowly into silicone butter stick molds that you can buy online and put them in the refrigerator. Put them on a firm tray like a cookie sheet as you fill them so that they don't collapse and spill when you move them. (Don't throw the solids down the drain - they will clog your pipes. Put them into a separate jar that you can throw away after it hardens.) Once the oil hardens into butter sticks in the molds, you remove the now clarified butter sticks from the molds and store them in a container and use them just like butter. We put each stick we make in a butter dish. You'd never know the difference. It tastes MUCH better and is cheaper than store bought ghee. And, if you make a lot, you can freeze some. It's really easy.

Frying is what creates a problem with coconut oil. To get the health benefits you say it has, you have to cold press it to get VCO or centrifuge coco milk to get the oil. This method does not rid the oil of its coconut smell and taste. So if you fry anything with virgin coconut oil it will leave a coconut flavor/smell. To get the coconut smell/taste out of this VCO we'd have to refine it; i.e, use steam/heat w/c would destroy the healthy nutrients in it or use chemical solvents w/c will destroy the healthy nutrients in it and introduce chemicals into the oil. Ergo, its almost the same as the seed oils if you want your fried food to have a neutral taste. However VCO ingested as a tonic or VCO used as a butter substitute in baking I absolutely agree is the healthiest plant oil.

Avocado oil is by far the healthiest oil among that bunch with its super high smoke point and infinitely healthier than coconut oil which is oxidative at high temperatures.
@_trismegistus2 жыл бұрын
He goes into more detail in another video about oils where he talks about the super high smoke point being something to watch out for because it means it has been processed to get there, or something. Dont remember exactly. I think any oil that burns is oxidative, it is not specific to coconut oil, right? It's smoke point seems no lower than butter or olive oil.
@_trismegistus2 жыл бұрын
@SplayMnBoss my understanding is that oxidation is related to oxygen containing molecules with an uneven number of electrons, and that allows them to react more readily in your body and it's not always a good result. It can cause cellular and DNA damage over time. That's why things called antioxidants are beneficial because they neutralize the free radicals that cause the oxidative stress
@_trismegistus2 жыл бұрын
@SplayMnBoss does the plastic packaging contaminate the food product? You can buy refined coconut oil which does not have much of a flavor. Not sure if the refining process is bad though... God I hate how ambiguous all of our food safety is. Also, where I live, much of the olive oils available come in glass bottles
@_trismegistus2 жыл бұрын
@SplayMnBoss I just did a bit of research and it turns out that refined coconut oil is pretty processed. It has a higher smoke point than virgin coconut oil but it may not be as good for you because of the processing done to it. It really does seem like virgin coconut oil, Olive oils, unrefined avocado oil, and butter / lard are the best cooking oils and fats to use. This guy talks about the high heat avocado oils still being somewhat of a better choice than the vegetable and seed oils, so I guess just keep doing your own research?

The other point to make is that it's better to buy oils that are stored in glass and not plastic (aluminum/can foods usually have plastic wax coating as well), generally true for most foods. Definitely worth the cost if you will be storing the food or oils for an extended period of time. The chemicals in the plastic can leach overtime into foods that are stored in plastic, especially if exposed to sunlight. BPA free doesn't mean much when there are literally over 50 other common chemicals used in food-grade plastics that react with acids and bases and are not stable when exposed to heat or UV rays from sunlight. If you must store food in plastic, make sure it is not heated above room temperature and is kept in dry place away from direct sunlight or UV rays, even if the plastic says “microwave” or “dishwasher” safe.

The best thing about avocado oil is the high smoke point, otherwise I'd use olive oil for everything. What does "naturally refined" mean? I noticed it on the bottle. I've recently switched to cooking with avocado because I can achieve higher griddle temps with it. I was hoping it was healthy enough.

Very good video. Spoken simply with clear slow speach. And mention of CALORIES. Food is a fuel. It burns money. Buy CALORIES PER DOLLAR folks. Buy OIL. I use virgin olive for cold food, coconut oil 4hot. Or making chocolate. (Diatomaceous earth chalk carries flavor.) Bible calls well oiled dishes food of kings. 1gallon olive oil is all I would need 2sirvive anywhere in grid down scenerio. In north winter I would fry tree buds, acorns, &game. Wild greens and all foods are sweetened bcuz oil high temps transform starch 2sugar. &WILD greens are horrendous 2survive on boiled. Fried, they are like candy and CALORIE PACKED.

I use the Mediterranean diet , because I know is the best ,and I grew up with that. I am almost 82, health, exercise , have a positive look on life, even on low day's. Thank you Ana Landeros. I'm not a fan. It is very high in omega6's, usually processed with solvents like hexane. I've never had it, but I imagine a more naturally processed oil would be quite bitter, so usually sold highly processed.

All oils change when you cook them. But really, who knows whether what's sold to us as 'Olive Oil' is even olive oil. You absolutely cannot trust the Italian brands, and there are others which are iffy.

Olive oil should not using for very high temperature of cooking! That my grandmother always said it. Now days cannot even trust of that if its pure olive oil. That's is why! Very convenient to us on summer time to travel some nearest part of Italy.From 🇨🇭 it's not so far by car.

I thought avocado oil was the best for cooking because it has a very high smoke point! Much higher than olive oil! Also the best olive oil has the lowest smoke point! Compared to the cheapest olive oil! I felt short shrift was given to my favorite oil, Avocado. Surely all avocado oils aren't the same.

You're actually better off if you ask me. I've been eating/using a lot of coconut oil in the past year and my blood work a week ago was terrible. There's something about coconut oil being a 12 carbon chain that can apparently make it harder to digest than other types of fat, and that also makes it raise your LDL levels. I'm trying to cut it down.
