Silver needle white tea uses only precious spring tea buds and is the most expensive white tea. It typically has a delicate and mild flavor. How can we brew this tea to make the most of it?
There are multiple ways of brewing silver needle. Should you brew it in a teapot or gaiwan? What temperature should the water be? There are so many variables to keep in mind. Here is what we have learned from all of our silver needle drinking:
1. A thin porcelain gaiwan helps to draw out the delicate aroma of the tea, making it easier to identify nuanced notes when you smell your teacup or the lid of the gaiwan. We don't recommend brewing young silver needle with yixing teaware because the clay can overwhelm the the aroma of the tea.
2. Very hot water (100°C/212°F) helps the tightly closed tea buds to fully open, releasing more of the aroma.
3. Short infusions help to bring out the complex aroma of the tea while minimizing bitterness.
4.The way you pour water will make a difference in how well the water hydrates the tea. We recommend you pour water slowly and evenly in a clockwise circle, starting on the edge of the gaiwan closest to you and ending in the center of the gaiwan.
